Cheap snacks for frozen kids - any ideas?
Comments (28)French Bread Pizza would be easy and probably pretty cheap, too. Slice some french bread loaves in half lengthwise, spread with some bottled pizza or pasta sauce, top with grated cheeses, veggies, or some crumbled veggie sausage patties or Boca Burgers, bake until hot through and cheese is melted. Apple juice costs less than cider and can be kept hot in a crock pot - sweetened with brown sugar, add some cinnamon sticks and cloves tied up in cheesecloth. That will warm up those skaters very nicely! Apple slices dipped in a warm caramel sauce would be different. Taco Soup - you could use crumbled Boca Burgers instead of ground beef or add another can of beans or two. This makes a large quantity and freezes well 2 pounds ground round, or veggie burgers, crumbled 1 large onion, diced 1 packet taco seasoning 1 packet Hidden Valley Ranch original dry mix salad dressing 1 can kidney beans (with liquid) 1 can pinto beans with jalapeños (with liquid) 1 can yellow hominy, optional 1 can diced tomatoes and green chilies (Rotel) 2 cans stewed tomatoes (I use Mexican stewed tomatoes) 1 8 oz. can tomato sauce 1 cup of water Cook beef and onion until beef is browned, drain excess grease. Add the remaining ingredients. Bring to a boil then reduce heat and simmer for 30 to 45 minutes. Penzy's Spicy Cheese Bread 1 cup grated mozzarella, Jack or Swiss cheese 1 cup grated colby or cheddar cheese l loaf french bread sliced in half lengthwise 2 TB butt, soft 1/2 small yellow or red onion minced 1 1/2 t. Italian herbs 1 t. garlic salt 1/2 t. crushed red pepper or sprinkled on cayenne pepper Heat oven to broil. Cover baking sheet with foil. Toss cheeses in a bowl. Butter cut surface of bread and place on sheet. Sprinkle onion on both halves of bread. Sprinkle half of herbs and garlic. Mound cheese on top of bread. Top with rest of herbs and garlic and the red pepper flakes or cayenne pepper, if desired. Boil 5-7 min. until the cheese melts and the bread is crusty. Comments (21)Here's one way that I have used up a chicken breast. If the breast is already cooked, then cook onion in step 2 and add chicken pieces to onion in pan to warm them. Chicken & Chunky Pesto on Whole Wheat Spaghetti I made the pesto (the yellow one at left) rather than the food processor as it was such a small amount and it turned out lovely and chunky. Here's the recipe as I made it for the two of us, using half of my usual pesto recipe: 1 chicken breast cut into bite sized strips 1 small onion - sliced 2 portions of whole wheat spaghetti 1/4 teasp sweet smoked Spanish paprika (optional) olive oil for cooking Pesto - this is the halved version: 2 cloves of garlic - minced 1 cup of loosely packed basil leaves - chopped 1/4 cup olive oil 1/4 teasp salt 1/4 teasp fresh ground black pepper 1/4 cup grated parmesan 1/4 cup pine nuts 1/2 teasp water 1. Put a large lidded pot of salted water on to boil for the spaghetti. 2. Prepare chicken and put into a small frying pan with onion and a bit of oil. Saute until cooked, turning and shaking pan.....about 12 minutes or until chicken pieces are cooked and all is lightly browned. Sprinkle with paprika and stir. Put on lid and keep warm while preparing the rest. 3. Meanwhile put in a ceramic mortar the salt, pepper, minced garlic and a few drops of the measured oil. Pound to a medium paste and add pine nuts, pounding some more, then add the chopped basil leaves, grated parmesan and some more of the oil. Continue grinding to a paste then add the rest of the olive oil. If it looks a little dry, add a few drops of water, up to 1/2 a teaspoon. 4. Boil the spaghetti 12 minutes or according to package. Drain and return to pan. Scoop out the pesto with a spoon and spatula and stir it into the spaghetti, mixing well. Serve on heated plates or platter and top with the chicken-onion mixture. Comments (3)Grainlady - thank you. That link is wonderful. Just full of good guidelines. Nancy - that's good to know about running cold water through the chicken. With fish, I put it in a bowl of ice water - and that defrosts it within a couple of hours, but I hadn't thought of a way to apply water to chicken - thanks. Sometimes I defrost in the microwave if I'm going to use it right away - like steaks or chicken breasts. But I didn't think I should do that with a whole chicken. Also, sometimes with chicken breasts, I plan to marinate overnight - in which case I think it's a no-no to defrost in the microwave (which would partially cook it) and then marinate. Are their some soups you wouldn't microwave? The one I have is potato-fennel - and I thought I recalled something about the texture being effected by either freezing or microwaving. Thanks. Lynn. A cup with a little crema in the middle then frozen is one of the best lunches for my hubbie. It thaws by lunch time so he can nuke it. The crema can heat up funny in the nuke but my hubbie likes it anyway. You must eat this with the crema!
