This particular one didn't have a "no toaster oven" comment on the box, so I cooked it in the container while keeping a close eye on it. Did fine, but from now on I'll pop them out of the plastic just to be on the safe side. We don't cook many frozen dinners anyway - it's a once-in-awhile thing. I'm actually loving having a toast oven, and we're using it daily. It's great not having to heat up a big oven to heat a handful of frozen snacks or the occassional frozen entree. And it does a good job of toasting, so we're pleased with that too. By lowering the temp slightly (I just took a guess), it cooked perfectly in the suggested amount of time. I'm sure if I had used the conventional oven temp, it would have burned. Thanks everyone!

Also meant to mention (and you can google this) - why did Russia ban microwave ovens. So I did and here is what I found. There was no law that banned microwave ovens in the old Soviet Union, William Kopp made this up for his article many years ago. Several debunkers have trawled the USSR legal code without success trying to find the law - or the law that repealed it during perestroika. One argument goes that if even the Soviets banned microwave ovens, and we all know how evil the Soviets were, then surely microwave ovens must be bad. It is in the same boat as the allegation that the Nazis invented microwave ovens. They didn't (if they had cavity magnetrons available, they would have done what the British did and built accurate high frequency radar sets). Evil inventors developing something that even the evil Soviet empire had to ban, how effective that is as anti microwave oven propaganda. The question is valid given the sheer bulk of comment on the internet, but the simple truth is that microwave ovens were not banned in the old USSR. Urban Myth. No evidence whatsoever to support it.

Thank you so much for the ideas and support! It turns out she has two dorm-sized fridge/freezers (one has her TV on top and I didn't notice it, lol) so she has more storage space than I'd thought. She lives nearby so DH sees her often (stops on his way home from work) but is more than willing to stop by on his way to work with food at least once a week. So far I'm using Rubbermaid-type freezer containers, the same I've always sent home leftovers in, as she has her own dishes. DH's car just had some $$$ repairs so there's no money for buying separate dishes right now - DH says the food's more important than the presentation, and his mom is very practical. So far I've got 2 containers of pasta with beefed-up marinara, 2 meals of brisket with homemade baked beans and new potatoes and 2 bowls of from-scratch, from-fresh chicken soup. It's a start. I don't think the budget would allow it (gonna be a tight holiday season) but do you think she could possibly work a bread machine? I've never used one so have no idea how difficult they are to use. If she could operate it, I may suggest it to my SIL. I'm thinking a small electric skillet and/or a small toaster/convection oven might be useful, if she has the space (and if they would be permitted).

I make my sons "Mom's Meals" for part of their Christmas present. Usually I do a batch of enchiladas then put 2 or 3 enchiladas and sauce in each freezer container. You can make chicken enchiladas or ground beef with black beans, finely diced onion, and cheese. Another thing I make is a chicken and stuffing casserole: 1 (3 pound) whole chicken (cooked in water, meat removed) 8 ounces dry bread stuffing mix 1 (10.75 ounce) can condensed cream of chicken soup 1 (10.75 ounce) can condensed cream of celery soup 1 1/4 cups chicken broth (from boiling the chicken) 1 cup evaporated milk Preheat oven to 350 degrees F (175 degrees C). Layer the deboned chicken meat in a lightly greased 9x13 inch baking dish. Sprinkle stuffing mix over the chicken layer. In a large bowl mix together the soups, broth and evaporated milk. Stir well. Pour this mixture over the stuffing mix, making sure it gets to the bottom of the baking dish (poke around with a fork to let it saturate into the bottom layer). Bake in the preheated oven for 35 to 45 minutes, until it starts to bubble in the center. Can be frozen before baking as everything is already cooked. I served this at an office lunch yesterday and it is very tasty - I think it will freeze just fine. Chicken Crunch Casserole 1 cup chopped celery 1 tablespoon butter or margarine 3 cups cubed cooked chicken breasts 1 1/2 cups cooked rice 1 (10 3/4 ounce) can cream of chicken soup, undiluted 3/4 cup mayonnaise (NOT Miracle Whip) 1 (8 ounce) can sliced water chestnuts, drained (Cut each water chestnut slice into quarters if you prefer them in smaller pieces) 1/2 cup sliced almonds 2 tablespoons chopped onions salt & pepper TOPPING 1 tablespoon melted butter or margarine 1/2 cup crushed corn flakes Directions 1In a skillet, saute' the celery in butter until tender. 2Remove from heat and add the next 8 ingredients. 3Spoon into an ungreased 2 1/2 quart baking dish. 4Combine melted butter& cornflakes. 5Sprinkle on top. 6Bake 350 degrees F for 30 minutes.
