Or there is always brownies!! Everyone always loves brownies and they are easy.....and Duncan Hines has a nice mix! LOL!
How many do you need to cook for?
For church meals I have done slews of cup cakes, crisps of rhubarb apples or whatever else was out there....pears....
Pineapple upside down cake....white cake mix....in a pan that has canned crushed pineapple and brown sugar in it....and topped with something whipped.

I've yet to meet a man that doesn't love Bread Pudding. I think it brings back childhood memories. Comfort food at its best. And what is also nice about bread pudding is it can be made in large pans and cut into squares to serve. I like mine with caramel sauce but it just as good without a sauce.

My first thoughts.... Cobblers, Crisps, Chocolate Pudding Cake.... then there's Rice Pudding, Tapioca...how about Dump Cake? All are dessert comfort foods in my way of thinking.

LC, kudos to you for doing this. My first thought was rice pudding. Filling and nutritous. A baked version can easily be reheated also. And with our cold temps right now, that might be just the ticket.

Texas sheet cake makes enough to feed a crowd. Honestly, from my limited experience working in a soup kitchen, they will take what they can get and at ours that's usually packaged items like snack cakes or cookies from Sam's. I think it's awesome you are taking the time to make something homemade.

I like the idea of cookies. In case someone is too full for dessert but wants a nibble later, it can be easily saved in a bit of cling film or a paper napkin.

I like the idea of bread pudding or even just a chocolate cake would be good. Here are a couple more ideas, obviously you'd have to adjust the recipes to feed however many guys you have....

Apple Walnut Cobbler
Source BH&G January 1997

5 c tart apples, peeled and thinly sliced
3/4 c chopped walnuts
3/4 c sugar, divided
1/2 tsp ground cinnamon
1 c all purpose flour
1 tsp baking powder
1 egg, beaten
1/2 c evaporated milk (I subbed cream as I had no EM on hand)
1/3 c butter or margarine, melted
Half & Half or light cream (Optional)

Preheat oven to 325F. Lightly grease an 8x8 square baking dish. Spread the apples in prepared baking dish. Sprinkle with 1/2 c walnuts, 1/4 c sugar and the cinnamon. In medium mixing bowl, stir together the flour, 1/2 c sugar and baking powder.

In small bowl, combine the egg, milk and melted butter. Stir egg mixture into the dry ingredients until smooth. Pour evenly over the apples, sprinkle with remaining walnuts.

Bake 50-55 minutes or until toothpick inserted in center comes out clean. Serve warm, cut into squares. If desired, serve with half & half or cream.

And one more...very simple but looks "special".

CREAMY DUTCH APPLE DESSERT

1/4 c. butter
1 1/2 c. graham cracker crumbs
1 (14 oz.) can Eagle Brand sweetened condensed milk (not evaporated milk)
1 c. (8 oz.) sour cream
1 (3 oz.) cream cheese
1/4 c. Realemon lemon juice
1 can Comstock apple pie filling
1/4 c. chopped walnuts
1/2 tsp. ground cinnamon

Preheat oven to 350 degrees. In a 1 1/2 quart shallow baking dish (10 x 6 inch) melt butter in oven. Sprinkle in crumbs; stir well. Press on bottom of dish. In medium bowl, mix together sweetened condensed milk, sour cream and lemon juice and cream cheese. Spread evenly over crumbs.

Spoon pie filling evenly over creamy layer. Sprinkle with walnuts that have been mixed with the cinnamon. Bake 25 to 30 minutes or until set. May be served warm or cold. Refrigerate leftovers. Variations: Omit cinnamon, substitute blueberry, cherry or peach pie filling for apple pie filling.

I have to ditto tracey-oh & fearlessem. I've made that Texas cake for over 25 years. It's easy (can be made start to finish in about 50 minutes), tastes better if made the day before, not expensive, serves a lot, & IT'S GOOD.

Thanks everyone. the PW texas sheet cake is cooling on the counter and DD is making some more snowman cookies to round out the dessert.

There are some restrictions on food that can be brought into the church/served at meals and one of them is no nuts, so I left them out of the frosting.

Newbie here. Been lurking for two years but decided it was time to join in on the fun. When chi83 suggested apple dumplings and said how easy they are to make, I thought 'is she crazy'? They're a real pain in the butt and for a crowd? No way. I just had to click on and see. OMG do they look great. Can't wait to try them...have to wait for bridge group to come over else I'd eat them all myself.

Before Christmas I was faced with the same challenge for Metropolitan Ministries. I asked about the portions that they anticipated serving each client and thought perhaps they would like something to go. I made brownies in cupcake papers so they were easily portable. I got positive feedback from the staff.

BTW--NOT YO' MAMA'S BANANA PUDDING is to die for. And I am definitely going to try the Apple Walnut Cobbler--thanks Linda. Plus it will give me another opportunity to use my whipped cream dispenser.
