Suggested recipes fro a small amount of fresh figs

My little fig tree has finally given me a few figs this year. So far, I have picked about 15 figs and would like to know if anyone has any recipes other than for jam, that this small amout of figs could be made into. I am still picking a few more and might wind up with just about a pint of them. The picked ones are in my fridge right now. They are the brown turkey type. Soon, the tree will be brought back indoors as its getting a bit cooler outside. Its in a big 2 foot square pot and is about 4 feet tall.

Hmm, DW made homemade fig bars last year with gifted figs. I can ask her to post the recipe after DD's soccer game 2nite. I won't eat fig newtons but loved these and they froze well. We've also made pound cake with fig jam swirled through the batter. It's usually one of the 1st to go at the annual PTO cake walk.

We dry most of ours- they are like candy for winter desserts.

A change in the AMOUNT of vinegar will affect the taste, and maybe safety. A SUBSTITUTION for another type of vinegar like a little bit of apple cider vinegar and a little bit less of Balsamic, may give you a similar product, but maybe with more fig taste, as opposed to an aged Balsamic and an red wine vinegar overtone trying to get to the milder fig taste. There was recent mention of using cheap Balsamic as its much smoother than a $50 bottle of 100 year old. Many wine vinegars and a few balsamics are less than 5% acidity, so always be sure there is enough acid. My brown turkey figs are so sweet when fully ripe they are almost like candy. Nothing like the fig newton filling. Lemon juice goes well too. Star anise, is quite strong if fresh. My mom had a small jar of whole and I grpimd up only one for a mild anis taste and it was a bit too much. In this, it maight need more to push the vinegar taste aside a little bit. As you see I am gettng creative here and have not really changed any safety issues. Black pepper.. Hmm, it might depend on its type. I have 4 different types, some are great and bold, others are just hot and peppery. The more recent pickle fig recipe posted, uses water and no wine based vinegars. It would probably give a milder more mellow 'figgy' flavor. It all depends on your favorite spice combinations, and the preferences for a specific goals.

Fresh Fig Chutney Recipe courtesy Emeril Lagasse, 2003 2 1/2 cups red wine vinegar 1/2 pound light brown sugar 1 onion, chopped 1/4 cup chopped fresh ginger 1 1/2 teaspoons yellow mustard seeds 1/4 lemon, zested 1/2 cinnamon stick 1 3/4 teaspoons salt 1/4 teaspoon ground allspice 1/8 teaspoon ground cloves 1 1/4 pounds firm, slightly underripe fresh figs, rinsed, stems removed and halved In a large saucepan combine the vinegar, sugar, onion, ginger, mustard seeds, lemon zest, cinnamon stick, salt, allspice, and cloves and bring to a boil. Reduce the heat to a simmer and cook until mixture is thickened and reduced by 2/3, forming a thick syrup. Add the figs and cook gently until the figs are very soft and beginning to fall apart and most of the liquid they've given off has evaporated, about 30 minutes. Transfer the chutney to a non-reactive container and allow to come to room temperature before serving. The chutney may be made up to 3 weeks in advance and stored in the refrigerator in an airtight container. (Alternately, hot chutney may be ladled into hot sterilized canning jars and processed in a hot-water bath according to manufacturer's directions.) There was once a tiny restaurant near here and the owner/chef was always experimenting with something different.... she once made a "fig butter" to serve with her dinner rolls, and it seemed to be just some ground figs mixed with softened butter. It was wonderful! I managed to find some fresh figs once (only time I ever saw them for sale here) and made some to go with a quick-bread. yum!

My very favorite potato salad of all time is Emeril's Flo's Potato Salad. There are several versions floating around, but this is the one I first used so always go back to it. The others omit cilantro, add parsley and bacon. I serve too many vegetarians to add bacon to anything. It has some mayo, but it's not very mayonnaisey...and I usually don't use the full amount. The potatoes and garlic are roasted, so have great flavor and texture, no need for a lot of sauce. This can easily be cut in half for a smaller recipe. I do NOT process the cilantro into the mayo mixture because it makes kind of a lime green dressing. I just chop it finely and fold it in. Roasted Potato Salad 2 pounds new potatoes 10 cloves of fresh garlic Drizzle of olive oil Salt & Freshly ground black pepper 3/4 cup Homemade Mayonnaise 2 tablespoons Creole Mustard Juice of one fresh lemon 1/4 cup fresh cilantro leaves, washed and patted dry 4 hard-boiled eggs, sliced 1/2 small red onion, thinly sliced Preheat the oven to 400 degrees F. In a mixing bowl, toss the potatoes and garlic with a drizzle of olive oil. Toss well. Season with salt and pepper. Place on a baking sheet and roast for 15 minutes. Remove from the oven and cool completely. Using a mini food processor, combine the mayonnaise, mustard and lemon juice. Process until smooth. Season with salt and pepper. Add the cilantro and continue to process until incorporated. In a mixing bowl, toss the roasted potatoes and garlic, cilantro mayonnaise, sliced eggs, and red onions. Mix well. Season with salt and pepper. Cover with plastic wrap and refrigerate or 2 hours. Remove from the refrigerator and mix the salad. Re-season with salt and pepper if needed.

I only have about 15 or so, but a few more are still ripening out there. I did see a cake that was made with them that lined the bottom of a glass pie pan with a cake like batter poured over them. Also the cook poured honey over them, which I think is a bit much. It was one of the PBS shows that aired a few nights ago, locally. I do like fig squares, but this would only make maybe about a 6 inch square of them. These are very ripe and quite soft right now.

Ken, just enjoy them fresh over some good vanilla bean ice cream. Maybe drizzle a little honey over the top as well.

I agree with the last poster. If you only have a few figs just eat them when they are absolutely ripe, ie about to split, at room temperature, not out of the fridge. I think that cooking with them would be a waste of beautiful fresh fruit. In years to come when your little tree produces a glut, then you can start to play around with them. And if you are looking at where I live and wondering how I can possibly have an opinion on figs, Brown Turkey is the most commonly grown fig in the UK and plenty of people get a crop most years including my parents and my in-laws. I grow a variety called Figue d'Or.

I do have to take the tree inside for the winter months, thats why its in a big pot. Mine are not splitting but are very soft and mostly brownish color. I usually see two or three ripe ones in about four days time. Most fell off early on due to the trees young age and first year for fruiting. Even though it might be small, I think I might make a small batch of fig squares, and if I see some in stores, add a few of them to mine just to get me to a small batch. You too can grow figs even in Z5, provided you take the tree indoors during winter months.
