Black Jack fig--good idea or not??
Comments (5)Unless you are collecting as many varieties as possible without regard to the hardiness of the fig varieties, there are much better choices for your area than Black Jack. Black Jack, according to some sources, is a dwarf variant of California Brown Turkey (San Piero, not Eastern Brown Turkey). Black Jack is not particularly hardy. Although my Black Jack (purchased at Lowe's and true to the fig characters generally associated with the Black Jack variety) has survived in-ground since 2003 here in 8B Austin, Texas although it died to the ground in the winters of 2003, 2004 and 2005. It does seem a little sensitive to cold. Other synonyms include: Black Spanish and ThompsonÂs Improved Brown Turkey. The taste of Black Jack is average, at least in my area....See MoreTrader Joe's has fresh figs
Comments (6)Hi, i sun dired about 50 figs this year on patio table on a clean plwood board covered with cheesecloth over board and then covered figs with cheesecloth as well, it was during a warm week with lots of sun in full sun , i did not have to bring them in at night as that week we did not have rain and the humidity was good, about 4 to 5 days with skin on and skin just slightly sliced with sharp knife and they dried very well, i also dried some Roma plum tomato's i grew from seed this year for the first time as well and put in olive oil in jar and to my surprise when eaten they had a roasted taste, they were very good in sandwhiches. But to dry many figs and or tomato's would take some work so maybe some sort of comercial dryer would be needed, next year if weather cooperates though i hope to dry well over a hundred as 50 does not last very long and were gone before our first snow. I cant find the pictures of them sorry but you could see what looked like little sparkly things on them the Sals tree figs dries well for me. Martin...See MoreFresh Figs
Comments (33)Lorraine's Candied Figs 6lbs figs 3 cups boiling water 3 cups sugar 3 tablespoons vinegar Make a syrup with the water, sugar and vinegar. Bring syrup to the boil and put in whole washed figs. Simmer gently for two hours. Take the figs out of the syrup, spread on a wire rack or tray and dry in a shaded, warm dry place for 4 to 5 days. (Lorraine used a large sort of cupboard with sides made of insect screening.) Turn after 2 days. Pack in layers in baking paper, you can roll them in superfine sugar before packing if desired. Lorraine also packed them in jars and poured sherry over them. Leave for about a week before using. If you leave them in the sherry a _really_ long time (like about a year :-) ) the sherry turns to a sort of jelly, so don't leave them in the sherry too long :-)...See MoreFresh Figs... lots... ideas offered, ideas wanted
Comments (16)I just found this one as well.... Canning experts? I think I like the sound of Jessica's version a bit better. Fresh Fig Chutney Recipe courtesy Emeril Lagasse, 2003 2 1/2 cups red wine vinegar 1/2 pound light brown sugar 1 onion, chopped 1/4 cup chopped fresh ginger 1 1/2 teaspoons yellow mustard seeds 1/4 lemon, zested 1/2 cinnamon stick 1 3/4 teaspoons salt 1/4 teaspoon ground allspice 1/8 teaspoon ground cloves 1 1/4 pounds firm, slightly underripe fresh figs, rinsed, stems removed and halved In a large saucepan combine the vinegar, sugar, onion, ginger, mustard seeds, lemon zest, cinnamon stick, salt, allspice, and cloves and bring to a boil. Reduce the heat to a simmer and cook until mixture is thickened and reduced by 2/3, forming a thick syrup. Add the figs and cook gently until the figs are very soft and beginning to fall apart and most of the liquid they've given off has evaporated, about 30 minutes. Transfer the chutney to a non-reactive container and allow to come to room temperature before serving. The chutney may be made up to 3 weeks in advance and stored in the refrigerator in an airtight container. (Alternately, hot chutney may be ladled into hot sterilized canning jars and processed in a hot-water bath according to manufacturer's directions.) Jessica, I think the Udon Noodle recipe is tomorrow's lunch! (By the way, the fig-vanilla bean jam is the only one I make now... it's by far the best of what I've tried.) Glenda, Thanks. Puff pastry is sometimes more calories than what I'd like. Good idea to put it in a quesadilla. And as an added bonus, DS eats about anything if I put it in quesadilla form! Annie, Thanks for posting Diane's Fig Newton recipe. The one I used last year was so-so. I like the orange zest addition... think it will make the difference. Kayskats. if I get past the "pickle" title, the recipe sounds good... it's in the running with the compote and the chutney....See More- 11 years ago
