Pickled figs recipe

ksrogers, this is the recipe I followed. Thank you for sharing your knowledge.

Pickled figs:

2 c sugar

2 1/2 c red wine vinegar

2 1/2 c balsamic vinegar

2 3" cinnamon sticks

12 cardamon pods

1 whole star anise

12 round thin slices peeled fresh ginger

8 thin slices lemon

12 whole black pepercorns

24 dried figs

The recipe called for dried figs but I used whole fresh ones. There was enough syrup for 48 medium size figs since they packed down.

Combine the first 9 ingredients and simmer over medium heat from 10 minutes. Add the figs and simmer for 20 minutes.

Pack in jars (I left out the spices except for a slice of lemon in each jar), and process for 15 minutes.

I used the balsamic vinegar from Costco which is a very good grade - four leaf certified quality.
