Good small potato salad? Small as in the amount made.

Been doing some rounds of pasta/macaroni salads, veggie salads, ect.. But the other day I got a few pounds of very nice small red potatoes for a good price. I want to make a couple small batches of potato salad with the rest of them, about a quart each of two flavors. We do love potato salad around here, but usually the store stuff sucks, and the right little taters sell at a premium to make good homemade stuff.

I kind of want to stay away from the MW/Mayo based stuff, last rounds of pasta salads were more of that type. I got a couple pounds of lovely fresh asparagus I can work in to potato salad. My love and I both don't like boiled eggs or cheese mixed into our potato salads. But like them as toppings/sides.

I figured it would be nice to throw a topic open and maybe get some fresh recipes on potato salad.

If it helps any other cold stuff in the fridge for the next couple days is stuff like cold cut sandwiches and BLT fixings, and a freshly made veggie salad of tomatoes, cucumbers, sweet peppers, onions, celery and carrots dressed in a sun dried tomato/italian salad combo and juicing up in the fridge. And Sunday dinner is going to be a fish/dark chicken or turkey, andouille, random other scraps from the freezer Cajun simmer up in the crockpot.
