Maybe the old oven temp was high. ;-) Can you give us an example of what you are cooking and the time difference? It is possible that the thermometer you bought is off. You could always have Wolf come out and check it.

With induction you have very precise control. If you like to bake, an electric oven in general bakes better. I have an electrolux induction which I am delighted with. If having a grill or griddle for your range is important to you - then a blue star or capital is something to look at. American Range has pro style ranges as well and are less then bluestar or capital in price. Having a range that gives you precise control will enhance your ability to cook more complicated items. You should decide the features which are important to you. For example, if you want a range which allows you to set an oven to start and stop cooking while you are out, then a blue star or capital could be ruled out. Cavimum points out that you need to stay with high end appliances for various reasons. I agree - to a point. I am an avid (gourmet) type cook - but I am also an interior designer. I think you need an appliance which meets your needs. If you are planning on staying in your home long term I would concentrate on getting what you like in terms of a growing cooking ability and your needs/wants/desires and product appearance. If you think you will sell in 5 years then you might "need" to go high- end. However, not everyone you might sell to wants/needs high end- or they might not like your choice. There is no reason to spend money for the sake of spending it. If you have left over $$$ for your remodel - take a nice vacation, buy a new bedroom set, put it in your children's college fund - or invest.

After reading the manual I realize that the charcoal filter is only needed if you're using it as a recirculating fan. We won't be. But some other comments have mentioned that code often has a limit on how many CFM's are allowed. We're moving to a small little community where they are sticklers about code (we've had fits with them on several other issues), so we'd better check to see what is allowed first. GWlolo.....Yes, I've read that the hood should be slightly wider than the cooktop. Ours won't be unfortunately. We have a 30" cooktop and a 30" hood, but I guess the range hood will extend beyond the actual burner area, so I think we'll be okay. I have to confess that until recently I didn't know that range hoods removed odors from cooking. For years I had a Thermador down-draft cooktop, and the fan was so loud that it honestly sounded like a jet engine taking off, so I didn't use it except on rare occasions. It's nice to know that in my new kitchen I'll be able to get rid of smells like brussels sprouts! A2gemini.....I agree...that's the only way I'll make bacon anymore, and I just learned this method about a year ago. BTW, we do live in a cold climate, and we do have building codes to contend with. But I didn't realize the hood CFMs would have to be considered. See above where I talk about this. I guess I have some checking to do. WileyBob.....I agree about Thermador....I never liked my down-draft, and I had it for about 20 years. I finally replaced it with a GE Monogram cooktop. I like it much better, but I still rarely use the down-draft. I'm looking forward to having a normal hood above the cooktop. I won't need anything as powerful as you need with your Wolf though. I've heard great things about the Wolf cooktops. Detroit burb.....I wish I had read your information before I started my research on range hoods. Good info there! The thing I've had the most trouble with is finding a 'not-too-high' CFM rated range hood with a low sone rating. We need something not too bulky looking, yet we still want a decent performance. So I think we're just going to go with the GE curved profile style in the link I've posted above. It's noisier than I wanted (7 sones on high), but I'm sure we won't have it on high for long periods of time. My husband and I did your calculations on CFM vs. room size, and I think we'll be okay with that one. Thanks for your help! artemis 78.....I also like the Kobe's, and we were considering going to Cincinnati to look at them (they don't sell them where we live), but I fear the building inspector (they really do inspect here) would think the CFM rating is too high. But I'll check on this.....glad to know you like yours. We're moving to a modest little home (we plan to spend most of the year in our RV), and I'm sure we already have the best kitchen in the neighborhood. First, you should consult your local code inspectors, preferably talking to a real person who can tell you what is required in your jurisdiction. If you decide you must have MUA, it is probably best to hire an HVAC company, who has experience in these kinds of installations. There have been a lot of home-brew DIY type systems discussed, especially over on the Appliance Forum, but whatever you do must be acceptable to the code guys. Don't expect the appliance manufacturer or sales person to give you adequate advice - they will never risk killing a sale by admitting that a MUA system is required which may be more expensive than the range and vent hood combined. The capacity of your vent hood is generally determined by the type of cooking you do, and what you can afford. In my jurisdiction, the code guy looked at what my range's manufacturer recommended for venting. If all you do is simmer, poach, roast, or reheat take-out, the 100-200 cfm recommended by that GreenBuildingAdvisor may be enough. But if you want to stir-fry, sear, or grill indoors, you will need every single cfm you can afford to clear out the smoke and grease from your living space. I really don't think you can grill indoors unless you have a hood that extracts much more than 400 cfm - probably requires 1000 cfm or greater. As for the size of the vent hood relative to your range, the 6" wider recommendation is for optimum performance. But in the real world, many of us have to compromise due to space or budget issues. My particular work-around is to do my high heat searing or stir-frying on a burner that is centred under my hood - at least my cook top affords me that choice, with several burners of the same output.
