Today's ingredient? Eggs...

As most know, I have chickens, which means I have eggs. I sell many/most, but have all I could possibly want or use. And sure enough, on the bottom shelf of the refrigerator I found 4 dozen, pushed to the back and dated August. (sigh) I ran water in the sink and added the eggs, waited to see if any floated. 8 of them did, leaving me with 3 full cartons and 4 in the last carton.

I promptly boiled a dozen, and made some egg salad, Elery loves the stuff and uses it like dip with crackers. It won't last long. I'm not a huge fan of it, but mine only has mayonnaise and a bit of mustard, a spoonful of home canned sweet relish. Maybe I should go a bit fancier. I tried the addition of curry, but I really don't care much for curry and that wasn't an exception. What do you put in your egg salad? As you can see, mine's pretty plain.



I decided to make another of Elery's favorites, coconut cream pie, that used the "stray" 4 eggs, or at least their yolks:



Another dozen went into "egg muffins", filled with cubed potato, fried with onions and leftover Italian seasoned chicken sausage:



With half a loaf of bread going stale, I used 6 more eggs to make some french toast, which I'll freeze and the grandkids will rewarm in the toaster and spread with Nutella. 6 more went into tonight's supper, an egg casserole with grated zucchini, corn, green chilis and some cheese from the back of the cheese drawer.

We'll see what tomorrow brings. I still have a dozen dated September 5, I'll need to use those up in the next week or so. The next ingredient will be that bucket of apples in the garage, I don't have storage space to keep them so I need to use them up.

So, to avoid this problem in the future I'll keep a closer eye on the refrigerator, but please, give me your favorite egg recipes. I have a challah recipes that takes 6 eggs and a pumpkin bread that uses 4. I am not a morning person and so have one egg, over easy, with one slice of toast and a cup of black coffee every morning, mostly because I have a husband that loves breakfast. Breakfast for supper? There's quiche and frittata, of course, but what else?
