MY stepson and his wife have been "doing" keto for some time now, and just visited last weekend. Their kids, of course, are NOT doing keto, LOL.

I stocked up on some nice cheese, boiled a couple dozen eggs, roasted a chicken for snacks and/or sandwiches. I didn't even try to bake "keto" bread, I bought a loaf from the grocery store as well as some of those low carb tortilla wraps. They told me they eat a lot of boiled eggs, just grab and go. My stepson (who I adore), made "snack sandwiches" out of a slice of chicken breast between two slices of Dubliner cheese, LOL. The kids made nachos with a bag of tortilla chips and some of the cheese, so they were happy too.

It wasn't difficult for me, the keto diet started as a treatment for epilepsy, so my oldest daughter tried it in high school. It was too difficult back then, before the low carb craze and she didn't stick with it, but I'd done my homework and so I already had a basic knowledge.

I also had two secretaries who had bariatric surgery and I watched them eat boiled eggs, cheese, sausage, so the snacks should kind of "intermesh".

Thanks, Annie! I had not thought about boiling eggs! I may even devil a few. We are Southerners and most of us love our deviled eggs!

Maybe I’ll pick up a rotisserie chicken from the grocery, too. And some deli sliced meat.

I had that happen with the posting just now on the one with "carp" in the title. I could see the Vegas and betting being moderated in spam prevention, but I learned to say "carp" from the gang who were here in the Spike years, but that's the only thing I could think that might be flagged. Unless they're just pulling random posts for human observation.

Are granola and fruit keto? Or maybe I'm thinking it's Paleo that they're not... It's all very confusing. Make your own snacks from sandwich fixings is a great idea. Don't forget vegetables!

Something I made all Summer for a grab and go adjacent thing is crustless veggie quiche, with milk or half and half rather than heavy cream. Spray oil in a glass or pyroceram pie plate and it comes out just fine. Sauté the veg just enough to pull out some of the water content, or just forget it and allow the custard to be a little watery, but still good. 6 large eggs to 1 3/4 c. milk for a regular 9" pie plate. Just fill the dish loosely with broccoli, chard, or whatever you have, season the custard, and bake an hour or until set at 325F. Good cold or zapped.

As a riff on @plllog's crustless quiche AKA frittata, try making them in mini-muffin tins. Perfect for a snack.

People who eat keto, snack on things like meat and cheese and hardboiled eggs....sometimes celery, sometimes a spoonful of peanutbutter...unsweetened of course. Also almonds and pistachios.
Don't buy things like baloney and hot dogs...but sliced ham, corned beef, chicken and turkey are good.

Dog, could you expand on the keto chocolate truffles, please? I too will probably go with only things we would eat, since I anticipate a lot of leftovers.

Lindac, DH is averse to things like baloney and hot dogs, although I would eat my weight in them! I thought about buying a Honey Baked Ham, but I thought “honey” might not be good. However, as I said, he isn’t rigid when he is a guest, I’m told.

Fun, how do you reheat the mini-frittatas?

Chocolate truffles, being small, will never go un-wanted...unless chocolate is hated...

I / we, in my home, find nothing finer than a small truffle. I purchased the three set of scoops Annie recommended years ago.

Brilliant. Use for meatballs, cod/salmon cakes, etc. Even portions for even cooking.

When I do make truffles for family and friends away from my neighbor...at the beach home...I google a recipe and use what I have on hand.

Often Keto and Paleo is a group of whole food organic. Dirty dozen, clean 15. For a few days with family it is no big deal. Obnoxious to preach a diet. Sounds like nothing will be an issue. Most using a specific diet 'structured' will bring their own foods or snacks.

-I always, when traveling, road trip or flight, pack my own gorp/snack/veg so I do not have to rely on anyone.

2020 with an organic veg box delivery every two weeks and a 'pantry' add-on list...I ordered a few times grain-free keto granola. We have loved greek yogurt, fresh fruit and a tBsp of homemade granola for years. Tiny 3-4 oz. A mini hump day snack. 9-10am. Add a half avocado or a half marinated egg to that...killer snack or lunch.

For a keto diet, turkey breast is better than ham. One of the main things for snacks is roasted almonds. The smoked ones are the best, although they are a bit salty.

The problem with "bending the rules" on a keto diet is that you go out of ketosis, which is the while point of the diet. Anyway.

One keto snack not mentioned is jerky. Do check the ingredients to see whether it has a lot of carbs though as some do.

Oh yeah, I forgot nuts. For vegetables, things like greens are good, so salads are easy. Vegetables my keto family members eat include asparagus and avocado, zucchini "zoodles" and cucumbers. They also eat "keto fat bombs", which are all over the internet but I've never made any!

Eating out can be tricky, but a steak house might work and even Chick Fil-A can provide a chicken breast, toss the bun. Low carb has become popular enough that hardly anyone bats an eye when you order a burger with extra cheese and bacon but no bun!

The trick isn't the keto part, it's the fact that he's also had bariatric surgery, so he's going to have to eat small amounts more often and I'm assuming a lot of the high fat choices popular in keto isn't going to agree with him.
