Two interrelated questions....

Firstly - What do you call ‘soup bones’? My sister raises cows. I usually buy a small amount of beef from her when she butchers one. I have requested soup bones for years. This year she gave me a few pounds. It turns out we were talking about different things. I was thinking marrow bones with little or no meat. What I got was beef shanks. Not at all a bad thing. I made a stew/osso buco made up dish. Lots of aromatics, wine and lemon/orange zest. Cooked long and slow until the meat fell apart. It came out really well.



Secondly - is there a worthwhile way to save orange zest? My winter treat this year has been buying half cases of organic oranges. They come out slightly cheaper than the ones at the grocery store and it gives me an opportunity to support our wonderful local health food store. I think I am probably on my last case for this year. But I have been thinking about saving the zest every time I peeled an orange. I think I put some in the dehydrator once but I think most of the flavor was gone. I was thinking maybe mixing the zest with sugar.
