Comments (7)I have the same range, circa '04. I've noticed that I get similar staining around the edges of my disk bottomed pans (sitram, demeyere) but not to any extent as much on my fully clad pans. Other than mix and gas pressure adjustments, the burner design appears pretty immutable, so it well be the nature of the beast. Other for an initial sear, having the gas about half way from medium to high is where I am most of the time, and it's fine. 2 fyis given that mine is couple of years older: the ignitor on the IR broiler went, and I've resorted for stirfry resting the wok directly on the smaller burner cap rather than using the wok grate--vast improvement as the flames bathe the round bottom of the wok and give a much better char. As for the Bluestar, let's just say that when that option was brought up, the resulting level of domestic discord was a little on the punishing side. Comments (2)I too was impressed with the value of the Five Star. One thing that convinced me not to buy it was that it required the layout of four burners and a reversible griddle/grill in the center. I would rather have six burners. I am also not sure if the griddle/ grill has enough btu's to get the job done. Lastly, I have heard concerns that reversible griddle/ grills can be a bear to keep clean (although I think an additional reversible plate can be purchased for $275 and then one can be used for a grill, one for a griddle. Comments (12)I went from a GE Profile Flat top to a 36" CC. I'll start with the look. I think the Capital is the best looking range I have seen. There shouldn't be any shame in wanting a good looking Range after spending a fortune on a remodel. As far as cleaning. It is much more work to clean the CC but I only clean it about every two weeks. I cleaned my flat top after every use to protect the surface. After cleaning the CC it always looks like a new range. I would not buy a range with any porcelain on the grates or top. It is almost impossible to keep them looking good. Now let's talk performance. The GE flat top outperformed the CC with boiling water on smaller pots about 8" and under. The reason is that even though the burners are 23k, there is no way you can turn up the flame all the way without making the pot handles smoking hot. I usually use the small pot burner for 8 and under so I can turn the flame up but it is still slower than the flat top. For larger pots or WOK cooking there is no comparison. The CC is great. Simmering is better on the flat top but the small pot burner or a diffuser works fine. The oven in the GE Profile had much better control and the oven height was much taller. The CC oven racks are the worst I have ever seen. When they heat up it is impossible to get them to slide without them cocking and getting stuck. If I did it again I would buy the CC range top and buy an electric oven to put beneath it. Comments (6)In February we were making a decision about the AG ranges and were looking at American, Bluestar and Wolf. We did tons of research and looked and looked. At that time I was also thinking I wanted a color range rather than stainless, so that narrowed it down to Bluestar and American. We decided the American was a better value than the Bluestar and were ready to order until we did a final measurement and discovered that the extra depth of the Performer would not work in our particular configuration because a drawer on an adjacent wall wouldn't open. So, much as we would have liked it, that eliminated that possibility. Then, we found an AG Wolf floor model on clearance (one of the old models with the open burner) and bought that. I like it, but personally I wouldn't want the burners on the new model Wolf. And, there have been a couple times (maybe only 3 or 4) when I thought to myself I would have liked to have one of the more powerful burners from the Performer. In your shoes, I'd save the money and get the Performer.
