Gluten Free Lemon Bars, thanks to NancyInNC

Today is Amanda's birthday, she's my oldest daughter. Because she's been diagnosed as celiac, she doesn't get a lot of birthday cakes or other treats. Her favorite dessert ever is NancyInNC's gluten free lemon bars, so I trotted off to the grocery, bought some Meyer lemons and made the bars. The recipe calls for lemon, but we like the Meyer Lemons so much that I use them when I can find them.


The recipe makes a pretty good sized batch, an entire 9X13 pan full, so I baked, sifted with powdered sugar, let them cool and trotted the whole pan off to Amanda's. Elery suggested I keep a piece but I just didn't think it would be right to present the pan with a chunk gone, LOL.




It's a great recipe, my family actually prefers this one to the original "full of gluten" version. The shortbread crust is crunchy, not soggy and the lemon layer is thick and doesn't run when you try to eat it. She was a very happy girl!
