Comments (5)Thanks, Martha, that does sound easy. I love this kind of recipe for when I have company, and I'm definitely not a morning person. I wish more would cook for 8 hours, so I could make them the night before, but if it were a late brunch, that 2 1/2 hours on high would work pretty well. Too bad about the carbs, though. (grin) I'm part Irish and I love potatoes. When I was a child we had them sometimes for all three meals in a day, and I remember Grandma would boil a huge pot, put them in the fridge and use them for American Fries or whatever for a couple of days. Comments (10)I used the make that fairly often, and I would frequently add turkey bacon, but I never added nutmeg - I never liked nutmeg with spinach even though I know it is traditional. I also use a velouté sauce in place of milk. Right now it is not on my current diet, but next week it will be. However, I would have to make a whole wheat pie crust. I like your addition of the red bell pepper - I've not added that yet, but I think it is a good idea. I do have whole nutmeg and a nutmeg grinder, but I use it only for sweet dishes, and I'm not supposed to have those any more either :(. I especially liked it in eggnog. I could use it in some German apple pancakes, however, but those would have to be whole wheat also....See MoreImpossible quiche
Comments (12)I go through a lot of eggs, too. But with my layers I haven't bought any eggs since last November. (Not that I'm saving money, if you count the price of the coop and the organic feed). I do sell some of the eggs. Yesterday I brought 9 scrambled eggs (with cheese and prosciutto) to the local Saturday coffee meet up, to share. I also scrambled 5 eggs in bad shape for the cockerels to eat. (Dirty or cracked.) I'll be making a 3-egg omelet with cheese and spinach in a few, for breakfast. I like making crust-less quiches, but for me the point of being crust-less is also to avoid flour in them all together - so no Bisquick added. Not only does it have no crust, it has no cream, no butter, and is still a very nice custard. 3 midsize onions, sliced and sautéed with a little wine or oil You can substitute any well wilted chopped vegetables for the onions, such as spinach, but make sure the water content is well wept out of them or the custard won't set. 3 eggs, well beaten 1 2/3 cups scalded milk (or evaporated) approx. 2 cups grated pungent cheese, such as gruyere approx. 1/4 cup finely grated (powder fine) hard cheese, such as parmesan salt to taste 2 dashes pepper sauce Mix and bake at 350 F for about 40 minutes (until custard is set). I like to make this with baby spinach, or spinach and onions, or spinach and mushrooms. I didn't even remember that it was originally just onions. :)...See More- 8 years ago
