Thanks for clearing that up. (Note to self, bigger freezer or consider...pressure power!) I went to the link but see that this recipe includes actual meat jarred up with the broth. "Chicken or turkey: Place large carcass bones with most of meat removed in a large stockpot, add enough water to cover bones, cover pot, and simmer 30 to 45 minutes or until remaining attached meat can be easily stripped from bones. Remove bones and pieces, cool broth, strip meat, discard excess fat, and return meat trimmings to broth. Reheat to boiling and fill jars, leaving 1-inch headspace. " I myself simmer turkey/chicken bones with a few veggies and herbs for a good 3 hours (ham hocks for maybe 4). There is little actual meat in the pot. The resulting (mostly) clear stock then jells up overnight in the fridge. At that point I usually freeze it. It would seem to me that a 30-45 minutes simmer as indicated above would most likely result in a really 'weeny' broth with little substance. Has anyone jarred up a meatless broth? I have made canarybird's Salmon quiche in a walnut crust and can tell you that it is absolutely delicious. Here is another favorite of mine: Crab Quiche For pastry 1-1/4 cups AP flour 3/4 stick cold unsalted butter cut into small chunks 2 Tbs. cold vegetable shortening 1/4 tsp salt 3-4 Tbs. ice water For Filling 1 lb. crabmeat ( I buy a can at Trader Joe's) 4 large eggs 2 cups heavy cream 2 Tbs finely chopped fresh parsley 2 Tbs finely chopped fresh chives 2 Tbs finely chopped fresh cilantro 1/2 tsp seafood seasoning 1/2 tsp salt 1/4 tsp black pepper 1/8 tsp freshly grated nutmeg (I don't use the nutmeg) 2 oz. coarsely grated Monterey Jack cheese (1/2 cup) 2 oz. coarsely grated Swiss cheese (1/2 cup) Make pastry: Blend together flour, butter, shortening, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until most of the mixture resembles coarse meal with some roughly pea-size butter lumps. Drizzle evenly with 2 Tbs. ice water and gently stir with a fork until incorporated, Squeeze a small handful. If it does not hold together, add more ice sater, 1/2 Tbs at a time. Do not ovework your dough, though or it will be tough. Turn out the mixture onto a work surface and divide into 4 portions. With the heal of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather dough together and press into a ball, then flatten into a 4" disk. Chill dough, wrapped in plastic wrap, until firm, at least one hour. Roll out dough into a 12" round on a lightly foured surface with a floured rolling pin and fit into a pie plate. Trim excess dough leaving a 1/2" overhang, then fold overhang under pastry and press against the rim of the pie plate to reinforce edge. Decoratively crimp edge and lightly prick bottom and side of shell with a fork. Chill until firm, about 30 minutes. Put oven rack in middle position and preheat oven to 375. Line shell with foil and fill with pie weight (I use black hard beans). Bake until pastry is golden along rim and set underneath the foil, about 20 minutes. Carefully remove foil and weights and bake shell until bottom and sides are pale golden, about 10 minutes more. Cool completely. Make filling: Whisk together cream, eggs, herbs, seafood seasoning, salt, pepper and nutmeg (if using) then stir in cheeses and crabmeat. Por into prebaked crust and bake until filling puffs and is no longer wobbly in center when quiche is gently shaken, 40-50 minutes. Cool in pie plate on rack 15 minutes. I also frequently add a little lemon juice and some red pepper or hot sauce to give it a little more bite. Serves 8. Gourmet September 2004

This recipe might be a good starting point for you. I've not made it, but it sounds like it might give you the type of filling you are looking for - and use 1/2 cup egg substitute for the eggs. Alexa ********************************************************* Chili Rellenos Casserole Ingredients: 2 (7 ounce) cans whole green chile peppers, drained 8 ounces Monterey Jack cheese, shredded 8 ounces Longhorn or Cheddar cheese, shredded 2 eggs, beaten 1 (5 ounce) can evaporated milk 2 tablespoons all-purpose flour 1/2 cup milk 1 (8 ounce) can tomato sauce Directions: 1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray. 2. Lay half of the chilies evenly in bottom of baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chilies. In a bowl, mix together the eggs, milk, and flour, and pour over the top of the chilies. 3. Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes. Sprinkle with remaining Jack and Cheddar cheeses, and serve

Sayhello... I would guess that was about 1 3/4 to 2 cups of chopped leek. As I mentioned above (my comment above the first photo) I used the white part of one and a quarter large leeks plus a little of the pale green part. You could judge perhaps by seeing that there is half the amount of leek as there is onion, so measure out your chopped onion into cups and then use half that amount of leek. I'll be making it again soon myself so I will measure the cups amount then and add it onto this thread. It doesn't have to be so exact though....just fill up the pie plate to the level in the second photo above. SharonCb
