Comments (32)Today I had a burger at a local place I've never been to before, it was pretty good. I've been craving my black bean soft taco recipe all week though so I made them yesterday with homemade tortillas and they hit the spot! Mhmmmm good! Comments (18)This morning for breakfast I fried three red tomatoes and two green peppers the neighbor had given me, added some chopped onions, scrambled six eggs in a bowl and when the veggies were soft and tender, poured the egg mixture over it all and sprinkled with parsley. Threw in a handful of shredded cheddar cheese, salt and pepper. Let it cook until set and turned it once or twice. Comments (40)Today I spent the day at an amusement park. I don't eat park food so my friend and I stopped at a local family restaurant. I had a French Dip made on their special house bread instead of the usual roll. Their bread is similar to a Dutch Crunch. Once they ran out of rolls and made my sandwich on a hunk of that bread they cut into a roll. I have requested it that way since. I brought half home and it's reheating in the toaster oven as I type. Comments (48)My sister had some family members over for dinner last night and she fixed Moroccan chicken with couscous. It was delicious!! Boneless chicken thighs cooked with a lot of spices, chickpeas, green olives, lemon juice and mint - not spicy but extremely flavorful! A simple spinach salad to go with. The best part was dessert.......and this was a new one for me - frozen bananas! You freeze very ripe (too ripe to use for just about anything else) bananas without the peels until hard as a rock. Then remove to room temp just long enough to allow them to thaw slightly - so you can easily break them into chunks. Put in a food processor or blender and smoosh to a creamy, smooth consistency and refreeze. That's it. Serve as you would ice cream. Tasted exactly as banana ice cream does but no added cream or eggs or sugar. It was amazing and I am not a huge fan of banana flavor (do not care for banana cream pie at all). She did add a small dollop of chocolate sauce over the top when serving, which didn't hurt :-) What a fast and easy and simple dessert!!...See More- 8 years agolast modified: 8 years ago
