Sides for BBQ'd hamburgers
Comments (19)Ohhh, thread swerves! I love them. Unwrap a big party pack of wings, score each wing's skin a couple times, cut the drummettes from the, I dunno what they're called, forearms? Steam the wings for 20 minutes. This renders out some of the fat, the scoring helps. Pat the wings dry, dry them in the refrigerator if you have time. Salt the wings and grill them until skin is browned and a bit crispy. Or, roast in oven while you're doing the potatoes, about 15-25 min. In large workbowl, have some melted butter and a bit of cayenne pepper or just a little bit of hot sauce. Dump all the wings, hot from the grill or oven, in the bowl and toss with the butter. Here is my method for grilled wings: Unwrap a party pack of wings and clip the tips off, slice/nick the skin between the drumette and wingette (that is what they are called here, John) ((Save those tips for stock)) But don't separate, makes it easier to flip on the grill. Brine the V shaped wing minus tip for 30 minutes and rinse and drain well. Pat dry and rack up and place in fridge for an hour or so. Grill, absolutely plain on medium until 3/4 done. You will find the brining prevents flareups. Mostly. Now place a healthy knob of butter into a serving bowl, throw the wings in on top and slosh a healthy amount of your fav hot sauce all over. Toss everything and let stand to hot marinate. I generally use the consumption of a bottle or can of beer as my timer here, at this point. Toss and stir frequently, don't just stand around and drink the beer. Add more hot sauce if the wings absorb it all. While the above is going on, turn the grill to high and scrape the grills. Throw the marinated wings onto the hot grill, ensuring they all lie flat, not on top of one another like a 70's hot tub party. Flip and repeat the above step. Remove to a serving platter. Serve, receive accolades....See MoreHow many hamburgers can one person eat?
Comments (15)Just a suggestion - large cutting board over washtub? We got one from ikea that had a counter edge lip (so it couldn't be pushed off). Our very long time in purgatory (turned out to be 7-8 months when originally guestimated as 2-4 weeks) was mostly over the cold months, so zero hamburgers here. Vegiburgers, on the other hand, microwave fairly well. Rotisserie chicken, bagged salads, frozen veg, occasionally nice entrees from nice delis that just needed reheat, carryout, eat out. I got a lot of experience in everything you can make in one pot at a time. Stews, braises, etc. I had a portable induction plate that was a life saver. So, think of the easiest way to make meals. Buy bottled dressing, premixed salad and forgive yourself later. Cook the entire bag of potatoes and refrigerate the leftovers so you can just heat in the micro on demand. Maybe think of it more as camping... And consider that the cost of an electric griddle or whatever you miss having most is less than dinners out. I kept staring at this thing from camp chef. dh kept telling me it was for outdoors - introduced a little bit of sense for which he got some rather pithy stares. Both the slight fantasies that you can buy something that will give you the ability to be normal during the remodel and the raw edges of stress poking out in unaccustomed ways might also need forgiveness....See MoreAn Ode to the fast food Hamburger
Comments (47)I just remembered. I have had McDonalds burgers many times! Every time I traveled to a different country, I always ended up going to their McDonalds at least once. For instance, when I was in Paris, I was getting tied of French food the last days. Let me tell you, a French Big Mc tasted really good. When I was in Argentina, where they really like meat, I even had a Royal Cheese with wine. Yes, you can get wine with your "Big Mac" there. From Pulp Fiction ------------------------------------------- VINCENT: ...You know what they call a Quarter Pounder with Cheese in Paris? JULES: They don't call it a Quarter Pounder with Cheese? VINCENT: No, they got the metric system there, they wouldn't know what the f??k a Quarter Pounder is. JULES: What'd they call it? VINCENT: Royale with Cheese. JULES: Royale with Cheese. What'd they call a Big Mac? VINCENT: Big Mac's a Big Mac, but they call it Le Big Mac. JULES: What do they call a Whopper? VINCENT: I dunno, I didn't go into a Burger King. -------------------------------------- dcarch This post was edited by dcarch on Fri, Jan 16, 15 at 14:36...See MoreHow to eat a Hot Dog
Comments (83)Nancyinnc, my grandmother used to grind big pieces of bologna, the ones cut from a roll, and grind it, then mix it with pickles and mayo for sandwich spread. The bread or crackers were run through after the bologna to "clean" the meat grinder! Cassandra, we used to have a hot dog chain here called "Weiner King". (grin) Yeah, really. I liked their "special", which had chili, cheese, onions, mustard, coleslaw, bun was buttered and grilled and the dog was 1/4 pound. We also had a "Dog and Suds", which was a root beer stand, and now Burger King sells hot dogs here too. A&W here is still a drive in where they bring the tray to your car and set it on the window, and they have the best chili dogs, although the place across the street which used to be a Dairy Queen and now is independent, gives them a run for their money. The Sam's Club here serves Nathan's Famous and Elery and I stopped in Ohio on a trip just to have a dog at Tony Packo's because he was a fan of "Klinger" on "MASH". We also have a lot of small independent hot dog places, from "Coney" dogs to Greek style chili dogs. Annie...See MoreUser
