Is it possible to over-thin the apples on a tree?

Hello, all. I have a large neglected apple tree, at least 20 feet tall, that I am trying to get back into shape, after it has been neglected for who-knows-how-long. When we bought the house and moved in at the start of summer a
year ago, I watched the diseased, pest-infected fruit grow to meager,
misshapen sizes. I want to eat fresh apples!

I pruned it somewhat late this winter, and I have sprayed it regularly and thinned the fruitlets assiduously. It still has hundreds upon hundreds of apples on it. In fact, I've now bagged over 700 apples just on this tree alone.

Having watched it closely, I still see that there are many hundreds of unbagged apples still on the tree. Do I do any harm by continuing to thin out the apples that have the plum curculio scars or evidence of other pest issues? Am I better off just to let them all grow now? Or can I assume that continuing to thin fruit automatically equates to larger fruit for those that remain?
