Recipe of the Day November 8 - Potluck!

My DSis made this tonite and said she and her DH loved it! I got the recipe today while watching a Canadian Food network show, The Main.

Cauliflower and Caper Gratin

Â 2 medium white potatoes, peeled and cut into quarters

Â 1 medium head of cauliflower, broken into florets

Â 2 cups heavy cream

Â 2 tbsp butter

Â 1 clove garlic, minced

Â 2 sprigs rosemary

Â 1 bay leaf

Â pinch nutmeg

Â salt and pepper to taste

Â 1/4 cup breadcrumbs

Â 1 cup grated emmanthal, swiss, or gouda cheese

Â 2 tbsp capers

Â chopped fresh rosemary, for garnish

1. Preheat oven to 400 F

2. Place potatoes in small saucepan and cover with cold water. Bring to a simmer and cook 12-15 minutes or until potatoes are fork tender. Drain potatoes and put through a ricer (or mash with a fork).

3. Meanwhile, cook cauliflower in a large pot of salted water for 10-12 minutes, or until tender.

4. In a large pot, bring cream to a simmer. Add butter, garlic, rosemary, bay leaf, nutmeg, and salt and pepper, to taste. Add potatoes. Add cooked cauliflower and stir to combine.

5. Transfer mixture to an 8x10 ovenproof casserole dish. Sprinkle with half of the breadcrumbs and then the cheese. Top with remaining breadcrumbs and capers.

6. Bake in preheated oven for 40-45 minutes or until bubbling and golden brown on top. Sprinkle with chopped rosemary before serving.

I've shared this before, but it is so darn goo, I thought I'd share it again.

Sweet n Saur Green Beans
Ingredients
1 pound slender green beans, trimmed

3 tablespoons butter
1 very large (14- to 16-ounce) red onion, peeled, halved lengthwise, sliced lengthwise
1 tablespoon chopped fresh marjoram
1/2 teaspoon dried crushed red pepper
1/3 cup red wine vinegar
2 tablespoons (packed) dark brown sugar
Preparation
Steam beans until crisp-tender, about 5 minutes. Transfer to plate.

Melt butter in heavy large skillet over high heat. Add next 3 ingredients. sautÃ© until onion begins to soften, about 2 minutes. Add vinegar and sugar. Stir until sauce thickens, about 1 1/2 minutes. Add beans; toss to coat and heat through, about 1 minute. Season with salt and pepper. Mound in shallow bowl.

I love potlucks!
I've taken Potato Pizza, the 5 Bean hotdish,coleslaw(both regular and the one I'm posting),AuGratin Potatoes you name it!

Potato Pizza
1 lb hamburger
1 can cheddar cheese soup
1 cup milk
4 cups raw potatoes, sliced and salted
Topping:
1 15oz can tomato sauce
1/2 cup chopped onion
1/2 teaspoon oregano
1/2 teaspoon pepper
1/2 teaspoon sugar
Brwon hamburger, put in oblong baking dish 2 inches deep. Mix the soup and milk and pour over hamburger. SLice the raw potatoes over above mixture,dot with butter.Spread on the topping,bake(covered) at 375 degrees for 45 minutes or til potatoes are done (I bake a good hour at least) Remove from oven and cover with 1 cup mozzarella cheese. Bake uncovered for 15 minutes.

ABC Coleslaw
1 red apple
1 stalk broccoli
1 small head cabbage
shredded carrots
pimentos (opt)
green peppers (opt)
Dressing:
1/2 teaspoon salt
3/4 cup sugar
1/2 cup vinegar
1/2 cup oil
dill weed
garlic salt or powder
1 teaspoon worcestershire sauce
1 tablespoon mustard

Au Gratin potatoes
Cook 6-8 potatoes in salted water with jackets on, until almost done, do not overcook. Cool and remove skins. Slice potatoes into a buttered casserole. Season with salt and pepper, onion and garlic salts. In saucepan put 1/2 cup cream, 1/2 cup milk and about 8 oz Velveeta cheese (cut in chunks) Melt together, pour over potatoes,bake at 350 degrees for about 1 hour until a golden brown.

I always use less tomatoes and add a can tomato sauce.Add use a whole green pepper too. SPANISH RICE CASSEROLE Serves 6 1 cup rice 1/2 pound lean ground beef 1/2 onion -- chopped 2 tablespoons butter 3 garlic cloves -- minced 1/2 green bell pepper -- chopped 2 1/2 cups stewed tomatoes 1 teaspoon salt 2 teaspoons chili powder Wash rice, drain and allow to dry thoroughly. Melt butter in heavy skillet; add rice. Cook, stirring constantly, until lightly browned, about 10 minutes. Add onions and green peppers and cook until onion is translucent golden. Add garlic and beef. Stir often to break up and brown meat. Add undrained, chopped tomatoes and seasonings. Cover and simmer about 25 minutes or until rice is tender and most of the liquid has been absorbed. Let stand, covered, about 5 minutes before serving.

I've had, and made, a pretzel pineapple salad before and it is absolutely scrumtious! Everyone should try nodakgal's recipe! My niece (in law)'s BOK CHOY Salad. This was a GREAT hit at our family campout last summer: BOK CHOY SALAD 1 head of bok choy (or substitute 1 bag of cole slaw mix) 6 green onions 3/4 c sunflower seeds 1/2 c slivered almonds 2 packages of ramen noodles, discard seasoning 3-4 T butter For dressing... 3/4 c oil 1/4 c soy sauce 3/4 c sugar 1/3 c vinegar Smash ramen noodles and brown in frying pan with butter. Let cool. In a large bowl, combine all ingredients for dressing and mix well. Set aside. Chop bok choy using stalks and a portion of the green leaf. Chop green onions using as much of the green stalk as you like. Combine boy choy (or cole slaw mix) and green onions with dressing. Toss to coat vegetables. Just before serving add sunflower seeds, almonds and browned ramen noodles. Store any leftovers in the fridge. My niece's twist... add the ramen noodles to the bok choy mix and let it marinate for a couple of hours in the fridge before serving. Then, add in the sunflower seeds and almonds before serving.

This is from the California Heritage Cookbook, 1976. I bought this book when it was published & have used it so much the spine cover is falling off. CHICKEN IMPERIAL Serves 8 2 c. dry bread crumbs 1/4 c. minced fresh parsley 1 clove garlic, minced 1 1/2 tsp salt 1/8 tsp. pepper 1 c. butter, melted 1 Tbsp. Dijon mustard 1 tsp Worcestershire sauce 8 chicken breasts, boned Combine the bread crumbs, minced parsley, garlic, salt & pepper in a pie plate or other dish that will hold a piece of chicken to roll. Mix together the melted butter, mustard & Worcestershire, also in a pie plate. Dip the chicken pieces first into the butter mixture, then roll in the crumb mixture, coating all sides. Place the pieces in a foil-lined shallow baking pan, just large enough to hold the pieces comfortably. Drizzle the remaining butter mixture over the chicken. Bake uncovered in a 350 degreee oven about 1 hour or until the juices run clear when pierced by a fork.
