Recipe of the day November 14 - Salad

I've made this a few times and it's always a hit!

SPECIAL SPINACH SALAD:

1/3 Cup olive oil

3 Tbs. sugar

2 Tbs. white wine vinegar (I substituted red wine vinegar because that's what I had)

2 Tbs. sour cream

1/2 tsp. ground mustard

1 pkg. (6 oz.) fresh baby spinach

1/2 cup chopped walnuts, toasted (I've tried pecans as well, also good)

1/2 cup dried cranberries (the orange flavored craisins are great)

In a jar with a tight-fitting lid, combine the oil, sugar, vinegar, sour cream and mustard; shake well. Divide spinach among four salad plates; drizzle with dressing. Sprinkle with walnuts & cranberries. Yield: 4 servings.

I'd add some sliced hard-boiled eggs. Sounds yummy!

Pretzel Salad

2 cups crushed pretzels
1/2 cup sugar
1/2 cup butter, melted
1 can pineapple tidbits, drained
12 ounces Cool Whip
8 ounces cream cheese, softened

8 servings

Mix the crushed pretzels, butter and sugar together.
Grease 9x13 pan.
Place pretzel mixuture in greased pan and bake for 10 minutes at 350 degrees.
Cool slightly and break pieces into chunks.
Beat cream cheese until well whipped and fluffy.
Add the cool whip- blend well.
Fold in the pineapple tidbits.
Chill- for about 1 hour.
About 1/2 hour before serving-- add pretzel pieces.
Best served same day- otherwise the pretzels will get soggy

Bombay Chicken Salad 2 chicken breasts, skinless, boneless,cut into bite size pieces 2 green onion stalks,julienned 1/2 box of shells pasta handful of raisins 3/4 tsp curry powder, or more to taste 1/2 tsp turmeric 2 tbsp sugar, or to taste 1 tbsp lime juice, or to taste 1/2 cup mayonnaise 1/2 cup sour cream Cook the shells until al dente. Drain and rinse with cold water. Meanwhile, cook the chicken in a skillet with a little bit of oil and salt. Add just enough curry to color the chicken. When chicken is almost done (maybe 2 minutes left,) add the green onion and the raisins. Set aside. In a medium bowl, mix the mayo, sour cream, sugar, lime juice, curry, and turmeric. Whisk and add salt and more curry, sugar, lime juice to taste (the recipes IÂve seen call for a ton of sugar- but I found it WAY too much) 2 tbsp is just about right for me...but if you like it sweeter, add more. If you like it tangy, more lime juice. Whisk until homogenous and then mix the pasta and chicken mixtures with it. Toss to coat. Add meat and carrots; stir-fry 5 min. STIR in dressing, hoisin sauce and water. Stir-fry 7 min. or until carrots are crisp-tender. ADD onions; cook 1 min. I saw that recipe from All Recipes, it sounds good, but I too would like to find out if anyone has made it. The one I make now is a hit with the family. It's from Quick Cooking, Little Cheddar Loaves, and my family likes it a lot. BUT they call it "Meat Wads"! Meat Wads Loaf: 1 egg 1 cup shredded cheddar cheese 1/2 cup oatmeal 1/2 cup chopped onion 1 tsp salt Pepper to taste 1 lb. ground beef Sauce: 2/3 cup catsup 1/2 cup brown sugar 1 1/2 tsp dry mustard In bowl beat egg and milk, stir in cheese, oats, onion, salt and pepper. Add beef and mix well. Shape into 8 mini loaves. Place in lightly greased 9x13 pan. Combine catsup, brown sugar and dry mustard, spoon over loaves. Bake uncovered at 350Â° for 45 minutes. My DH prefers a large loaf so he can have sandwiches the next day, so I just make it into a large loaf and bake a bit longer. Also, I use part turkey or pork for some of the beef.

I've had, and made, a pretzel pineapple salad before and it is absolutely scrumtious! Everyone should try nodakgal's recipe!

My niece (in law)'s BOK CHOY Salad. This was a GREAT hit at our family campout last summer:

BOK CHOY SALAD
1 head of bok choy (or substitute 1 bag of cole slaw mix)
6 green onions
3/4 c sunflower seeds
1/2 c slivered almonds
2 packages of ramen noodles, discard seasoning
3-4 T butter
For dressing...
3/4 c oil
1/4 c soy sauce
3/4 c sugar
1/3 c vinegar
Smash ramen noodles and brown in frying pan with butter. Let cool. In a large bowl, combine all ingredients for dressing and mix well. Set aside. Chop bok choy using stalks and a portion of the green leaf. Chop green onions using as much of the green stalk as you like. Combine boy choy (or cole slaw mix) and green onions with dressing. Toss to coat vegetables. Just before serving add sunflower seeds, almonds and browned ramen noodles. Store any leftovers in the fridge.
My niece's twist... add the ramen noodles to the bok choy mix and let it marinate for a couple of hours in the fridge before serving. Then, add in the sunflower seeds and almonds before serving.

I make a slaw similar to your bok chow salad with raman noodles and sunflower seeds and its delicious, ill look for the recipe!

I've made a salad similar to the bok chow, but used napa cabbage. It's really good.

DH's Aunt used to make this and bring to all the potlucks. It was delicious. The dressing tasted a bit like Catalina dressing, so I suppose you could substitute that in a pinch.

Sweet & Sour Carrot Salad

1 lb carrots
1 sweet onion, thinly sliced
1 small green pepper, in strips
Â½ c condensed tomato soup
Â½ c sugar
1/3 c vinagar
Â¼ c oil

Peel and slice carrots into thin slices. Steam until tender. Put into bowl, and add onion and pepper. Combine dressing ingredients and pour over carrot mixture. Cover and cill overnight. Use slotted spoon to serve.
