RECIPE: 14 day sweet pickle recipe

I am looking for a 14 day sweet pickle recipe that

originally was in a Cornell Extension leaflet in the

1950's:"Easy to Make Pickles and Relishes" by Lola

Dudgeon. It has pickling spice but no celery seed.

I used 100 five inch cucumbers and am not sure if that

is how the recipe began.

Suspect that these are a fermented pickle and you would use a salt brine to 'cure' them. Usually cukes done this way will remain a bright green as opposed to a lightening of skin color when in a vinegar based brine. Recently, I have posted many tips and suggestions on making a salt brine type of pickle. You do start with very fresh pickling cukes as well as fresh dill weed and dill seed heads. Not sure if yours were made at other times of year, besides the growing season of summer. Mine are half sours and are soaked in a salt brine/water for only about 2-3 days, depending on the cuke size. Because I like using fresh dill, they only get made in summer time. Linda Lou's recipe also has merits, as there, you also start with a salt brine cure prior to pickling. Its that first step that helps them to retain their bright color. Everyone may follow a recipe to the letter and realize that the taste might not be their preference, so start with small batches and adjust whatever you feel that was overpowering in the previous batch. Trial and error helps here. Once you get your taste preference met, then you write down the recipe. My mom used to make sweet picilili with green tomatoes, and her recipe was also composed of several recipes from different books, as well as her personal experience. Adding food colorng might be OK, but that would probably be better to add to a finely chopped cuke relish to improve appearance.

Or could it be something like this: This one is not canned. Cowboy Candy 1 1/4 cups sliced fresh jalapenos 1/2 cup sugar 1/4 cup water 1 drop green food coloring (optional) 1. Slice jalapenos, and place in a small sauce pan. 2. Add water and sugar. 3. Cook over medium heat until boiling. 4. Reduce temperature to low, and simmer until the liquid has reduced, and the sugar water has become syrup-like (about 15- 20 minutes depending on temperature of heat source). 5. Let cool and place in clean jelly jar. 6. Store in refrigerator. Here is another one. Not sure whether it is actually safe to can. I would seriously doubt either one of these has enough acid. Cajun Candy 1 lb green jalapenoÂs, sliced 1 Â½ lb ripe red jalapenoÂs, sliced 2 sweet yellow onions, sliced 1/2 cup vinegar 1/2 cup water 4 cups sugar 1 tsp turmeric 1 tsp celery seed 1 Tbsp mustard seed 4-5 cloves fresh garlic, sliced thin Pinch of salt Slice Jalapenos into 1/4" slices and slice the onions. I suggest wearing rubber gloves while handling the jalapenos and DO NOT TOUCH YOUR FACE! Place jalapenos & onions in pan with water and vinegar and bring to a boil. Cover, reduce heat and simmer/steam until tender (about 10 minutes.) Do not breath fumes. Pour off the mixture into a strainer, reserving Â½ cup of the water and vinegar. Return the Â½ cup water/vinegar liquid to the pan, and add the sugar and spices, cook for a few minutes to completely disolve the sugar...then return the peppers & onions and the sliced garlic to the pan with the sugar/spice syrup. Mix well, and simmer for about 5-10 minutes. Place boiling mixture into sterilized jars, leaving 1/4 inch headspace. Put on caps and place rings on snugly. Process in boiling water bath for about 5 minutes. Cool & refridgerate after opening a jar. Now, once you've made the candied jalapenos....and have a jar of them in the fridge - for a special treat, try mixing some of them 50/50 with Smucker's Peach Preserves for a FANTASTIC peach/jalapeno chutney! Great with smoked pork loin, grilled chicken, etc. And one more Candied Jalapenos Cowboy Candy This makes a very tasty and spicy addition to almost any meal. 4 lbs fresh jalepeno peppers sliced 2 lbs onions diced 1/2 cup vinegar 1/2 cup water 6 to 8 cups sugar depending on your sweet tooth I like more 2 Tbs mustard seed 1 tsp turmeric 2 tsp celery seed (optional) 1 Tbs garlic powder 1 tsp ginger Slice Jalapenos into thin slices and dice onions (I would suggest a pair of rubber gloves for handling jalapenos, personal experience, do not touch your face!). Place in pan with water and vinegar,bring to a boil, reduce heat & simmer about 10 min or until tender. (do not breath fumes) . Pour off most of the water vinegar mixture, add the sugar and spices bring to soft candy temperature to completly disolve sugarabout anothe 10 min. Place boiling mixture into jars,leaving 1/4 inch headspace. Adjust caps.

Sorry no, they will turn to mush once frozen, They are similar to regular peppers and contain a lot of water, so they tend to get quite soft when frozen and then thawed. If you remove the seeds you can called them 'Picante' sweet and hot peppers. I see them in some serve yourself things like cheese in brine, olives and a few other marinted veggies like mushrooms in some bigger supermarkets. I bought a few of the Picanti peppers not knowing they were the hot ones. But I guess thats why they are called picante. I grew a lot of sweet cherry peppers as you can never find them in any stores. I left the seeds in mine, however, and pierced each with a skewer right through both sides to get the brine inside. If you want to help them remain a bit more crisp for a longer term in picking brine, you can also add some of the calcium chloride which helps pickled foods from getting too soft when stored in vinegar. I use it in most of my dills and even in some sweet mixed pickles. It takes the place of Ball Pickle Crisp which was discontinued recently, but was the alternative to use instead of nasty, caustic lime soaks. I kind of wonder how yours would taste if a whole clove of garlic was packed inside each cherry pepper. Once pickled, garlic gets very mild too. I grow Music garlic with really big cloves and one clove can fit quite snugly inside an emptied out cherry pepper. Just a thought.. Add it to just a few per jar to see if you like that combo. I bet after that, all your hot peppers will get a clove of garlic stuffed into each. I recall some kind of meat stuffed in cherry peppers and commercially canned in glass jars too, but I would't try that as it would need a PC to can and that would really soften the cherry peppers too much. The cherry peppers should keep in the fridge for about a week with no handling excpet a good rinse and drain. I place a bunch in a big plastic zipper bag, but leave it partially open. They get a rinse in cold water, and well drained before they are placed in bags. I do that with pickling cukes and my delicate pepperoncini peppers and they keep nearly a week in the fridge that way. One way to help keep them longer would be to deseed as you would, and simply place them in a big container in the fridge with some full strength 5% vinegar and about half the pickling salt necessary. They should keep that way several weeks in the fridge without spoiling if they are submerged. Then, when you want to can them, you pour out that inital brine and fill the jars with a fresh brine made to the taste you prefer. That should help to hold them in 'suspension' a while. I hope you realize that all of this is my 'secret method' an isn't really a way to preserve per the 'experts' here, but it will work well if you keep your fridge colder than 38 degrees, like down to 34-36 degrees tops, and they will remain firm enough. I do hope that most of the hot cherry peppers have ripened to red color? Good luck!

Yes minirose---I would only give them a hot water bath for 5 min.. 20 minutes would cook the cabbage and make it limp. You only want to seal the jars not cook the contents. Often I don't even water bath pickles. I meticuously wipe the jar tops with damp paper towel and always use new snap lids and if they pop and go concave the jar is sealed. In all the many years I've been canning I can count on one hand the number of jars that have spoiled and they are usually jars that are old. I do raw pack tomatoes and hot water bath them for 35 minutes and the tomatoes boil and cook in it. My quarts of tomato juice with the contents cooked calls for 10 min.

This is a 12 day receipe, easy to make. My Mom made them for years. The pickle measurement is not exact but it works for me anyway. I take my 2 gallon container with me to the store when I buy the pickles.

Crisp Sweet pickles or "Polly's Pickles"

Fill a two gallon container with sliced cucumber pickles ( not too thin). Add 1 pint of salt to 1 gallon boiling water. Pour over the cucumbers and let stand for 5 days.
6th day- Drain off salt water and cover with boiling water. Let stand 24 hours.
7th day- Drain,cover with boiling water and 1Tbl. Alum, 8c vinegar, 16c sugar, 1/2c pickling spice.
9th day, 10th and 11th day- Drain syrup- bring it to a boil and pour over pickles again. Do this every day.
12th day- put pickles in jars. It is not necessary to heat before canning, ot to seal jars air tight. Do NOT heat cucumbers or seal or they will get soft.
Makes about6 quarts.

I realize it's a year late, but I have a great 14-day pickle recipe if you still need it. You do NOT boil the syrup as the other posted recipe. Let me know if you still want it.

posie4U-- here it is

You will need some kind of crock (glass or glazed pottery)-- I bought a couple at Walmart year before last - they are clear glass (2 gallons each) with glass lids, sort of like the glass jars they used to have candy in at old timey general stores. Don't know if they still have them.

Anyway this is the recipe.

Lay crock on its side and pack cucumbers in as tightly as possible. (This recipe is not exact. I have tweaked it some with regard to quantities though, and it still works out fine.) These are the quantities I used for one - 2 gallon crock.

Day 1 -
Dissolve 2 cups of salt in 1 gallon of boiling water. Pour over cucumbers and let stand 24 hours.

Day 2 -

Dissolve 1 to 1 1/2 jars of powdered alum (the recipe is old and says a box of alum-- don't think it comes that way anymore - 1 used 1 and 1/2 containers - which were 1.9 ozs. each for the 2 gallon crock of pickles.

Day 3 -
Drain cukes. Pour fresh boiling water over cucumbers and let stand 24 hours.

Day 4 -
Drain. Boil together 1 gal. vinegar and about 1 oz. of pickling spice ( put spices in cheescloth or old clean handkerchief and tie up)-- put in pot with vinegar. After you pour the vinegar over the pickles, put the bag of spices in the top of the crock with the cucumbers.

let stand for 9 DAYS.

After 9 days - Drain cucumbers and slice crosswise. Put a layer of cucumbers and a layer of sugar in large plastic bowls or some type of non-reactive container. Use plenty of sugar so you have enough syrup to cover the cucumbers when you pack them in jars. (I think about 5-7+ lbs. for the 2 gallon crock.) Let the sugar melt and then fill clean jars. (qts. or pints) No need to process. These keep very well for a couple of years in a dark dry place.

The amount of pickles you have depends on the size and quantity of cucumbers. But like I said I'm doing a 2 gallon crock and I expect to have probably about 5-7 qts. of pickles.

For potato salad, chicken salad, etc. these are the absolute best. Make sure to chill before using.

Please excuse the approximate quantities. This is a very old recipe, but I've never had a bad pickle.

benflower: I'm new at pickling, and have a substantial crop of lemon cucumbers coming in, which I want to pickle. Will your recipe work for them?

I've never heard of lemon cukes. I have used both the pickling cucumbers and the burpless kind, both work fine-- I would give it a try if I were you. I think you could use any kind of cucumber. Just got mine done and they're great.
