75-250 is indeed a pretty large range. But not too unusual to do that. According to https://www.ysi.com/water-hardness that would be somewhere between soft and slightly hard (no particular endorsement; this was just the first site that I found online). I don't think you'd go horribly wrong by telling your oven to treat this as "medium". Worst case, it prompts you to descale the unit more frequently than strictly necessary. That'll waste a little money on supplies. But if in doubt, that's better than wasting money on repairs. I recommend you buy the descaling tabs in bulk. They regularly show up on Amazon and other online services. And they definitely get cheaper if you buy a bigger package. You'll need two per descale cycle. I usually need to do so every six to nine months. But that might not be the same for you. We use the steam oven very frequently, but we have very soft water. Also, you absolutely want to make sure you have tabs on hand, when the unit needs it. You don't want to find yourself in a situation where you can't use the oven for a few days while waiting for supplies.

I have a Ninja Pro System 1100 and love it. I didn't want to put the money out for a Vitamix when all I really needed was a more powerful blender, and the Ninja was a HUGE improvement over the blender I was using. I decided on the Ninja after watching videos on YouTube and I'd suggest taking advantage of those. I have both the 72-oz. pitcher and the 40-oz. bowl, which also sold me on the unit, plus the blades for whipping, a dough blade and dough paddle along with the 6-blade assembly for the tall pitcher. I use the Ninja more than any blender I've ever owned, and I've owned blenders since 1970. The first chapter in the 216-page Ninja (150 recipes) Cookbook is all about juice blends and smoothies, and the second chapter is frozen drink specialties; and I'm sure you would find either great recipes to try or inspiration for your own concoctions. We're whole foods people, so I don't make much effort blending and juicing so no personal experience. I needed an up-grade for using with recipes in "No Wheat Grinder Wheat Recipes" by Cindi Van Bibber where you blend cooked whole wheat berries in a blender + other ingredients to make a wide variety of recipes (including breads, cookies, main dishes, etc). Yes. Because in saying "The health benefits can be remarkable", you're suggesting an outcome that hasn't been shown. IE, no evidence. Nutrients beyond what your body needs mostly just pass through. You need a sufficient amount of a long list of things, or close to it. A balanced and varied diet mostly provides them, with a very few exceptions. Some things, very little is needed. More isn't better, you just need "enough". I think you know that. I'm glad you're feeling well, that's what matters. You know that personal health ebbs and flows anyway. Maybe smearing bacon grease on your arms every morning instead of drinking your conconction might have anecdotally coincided with a time when your health improved. There's no way to know. There's also no way to know if doing nothing would have also had the same "effect", because you didn't do "nothing". So no "with" versus "without", no "with this" instead of "with that". No more proof of one than another. It takes the study of thousands of people over many years, with controls, to even suggest any type of observed effect. That's all.....no biggie. I hope your good health continues for a very long time, thoughtful people to toss around ideas with are always in short supply.

I haven't ventured too far from the recipe book I received with my Thermador pro steam range. I have made a variety of meals and have not had a bad one. A favorite repeat is the Mexican chicken and vegetable wraps. Steaming a variety of vegetables and making hard boiled eggs are wonderfully simple. The steam oven capacity is perfect- I honestly would never need anything larger. And I have yet to have to refill the reservoir during cooking- a total non issue. Unless someone is trying to sell you a Wolf or Miele ;)
