Chicken Fettucine with Sambuca and Cranberries

(ingredients in RED)

Ahead of time (2-4 hours):

5-6 whole boneless, skinless chicken breasts, cubed

3 big garlic cloves, minced

Â Place chicken, mixed with garlic in covered bowl in fridge.

2 Â½ c whipping cream

Â Place in jar in fridge

Â¼ c Sambuca liqueur

Â¼ c orange juice, frozen concentrate

Â Place in jar in fridge

1 c freshly grated parmesan cheese

Â½ tsp nutmeg

Â½ tsp salt and pepper (+/- to taste)

Â Place in jar in fridge

14 oz can artichokes, drained and chopped

Â¾ - 1 c dried, orange flavored cranberries

Â Place in jar in fridge

Garnish: fresh parsley and orange zest

1 hour ahead of time:

1tbsp butter plus 1 tbsp olive oil

Â In a large frying pan, sautÃ© the chicken and garlic in butter and oil until barely cooked (undercook!).

Â Remove chicken from pan and set aside.

Â Save drippings in same pan.

Last minute:

1 lb fettucine, cook per directions.

Prepare sauce:

Â In chicken pan juices, add cream, sambuca and orange juice concentrate and stir well.

Â Add parmesan, nutmeg, salt and pepper, stirring until smooth.

Â Simmer, stirring constantly for 5 minutes.

Â Add chopped artichokes, cranberries and chicken. Simmer and stir for 10 minutes. ThatÂs it for the sauce.

Â Carefully fold sauce into pasta and garnish with parsley and orange zest.

Â Serves 6-8.

Excellent meal, presented beautifully. Rave reviews.

I have all the ingredients on hand,I'll make this for Sunday dinner tonight! But first I'm having two hard-boiled eggs for my breakfast. I need protein!

Hey now, that's TWO chicken recipes in a row!!! Isn't it? I'm cool with eating "Mor Chikin" but I think yesterday was a chicken/pasta dish too!

But before I check I'm gonna tell you what's on the culinary agenda for fantasy football Sunday!

TACO SALAD!

Yes, it's base, it's fast foodie and it's party food... but it works! I'm not talkin' about the frito, corn chip casserole thing... I'm talking about deep frying some large tortillas into bowls and whipping up some of those garden peppers I'm picking today into a delicious mix of pintos, peppers and fresh ground sirloin (yeah, I DO grind my own) Top that with some queso fresco and slap on the salsa and guacamole! mmmmmmmmm

Yeah! Go FALCONS!! Go Fantasy team.. Go Go GO!!

I made the pecan tart on Ann's blog. I sent it to the grandparent's house yesterday while still warm. Alice took it with her when she went for a visit yesterday. The recipe as given: Double Chocolate Pecan Pie ========================== For the filling: 3 tbsp. unsalted butter, cut into 1-inch pieces ¾ cup packed dark brown sugar ½ tsp. salt 2 large eggs ½ cup corn syrup (I used half maple syrup, half corn syrup) 1 tsp. vanilla extract 1 cup pecans, toasted and chopped into small pieces 3 oz. semi-sweet chocolate, coarsely chopped 3 oz. bittersweet chocolate, coarsely chopped Butter-Lard Pastry ================== Edited: May/20092 cups all purpose flour 3/4 teaspoon salt 1/3 cup butter 1/3 cup lard (or shortening- Crisco) 5 to 6 tablespoons of ice water For sweet pies add 1 to 2 teaspoons white sugar. Mix flour with salt, and cut in butter and lard. An easy way to cut in the fat is to use a food Processor. Cut the butter and lard into cubes add to the flour and pulse. Butter/lard should be the size of peas. Pour mixture into a bowl and add the icewater, mixing quickly with a fork, just until the dough come stogether. Turn out on to floured board and form into a ball. Cut into two pieces, wrap in plastic and refrigerate for an hour. Another way to cut into the butter is to use a box grater. Makes the perfect size pieces of butter. Just make sure that the butter is very cold. NOTE: This crust is also perfect made with all butter. On a lightly-floured work surface, roll the pie dough out into a 12-inch round. Transfer the round to a 9-inch pie plate by rolling the dough around the rolling pin and unrolling it over the pie pan. Trim the edges as necessary and create a fluted pattern using a finger to make the indentations. Freeze the dough-lined pie plate until firm and very cold, about 30 minutes. Adjust an oven rack to lower middle position and heat the oven to 375° F. Remove the dough-lined plate from the freezer, press a sheet of foil inside the pie shell and fill with ceramic baking beads. Bake about 30 minutes, until the dough looks dry and light in color. Carefully remove the foil and weights. Continue baking the crust 5-6 minutes more, until light golden brown. While the pie crust is baking, make the filling. Melt the butter in a medium heatproof bowl set over a pot of simmering water. Remove the bowl from the double boiler but maintain the simmering water. Stir in the sugar and salt with a wooden spoon until the butter is absorbed. Beat in the eggs, corn syrup and vanilla. Return the bowl to the double boiler and heat, stirring frequently, until the mixture is shiny and hot to the touch, about 130° F on an instant-read thermometer. Remove from the heat and stir in the pecans. As soon as the pie shell comes out of the oven, lower the oven temperature to 275° F. Pour the filling into the pie shell. Scatter the chopped chocolate pieces over the filling and press into the filling with the back of a spoon. Bake on the middle rack of the oven about 50-60 minutes, until the pie looks set but slightly soft, like gelatin, when gently pressed with the back of a spoon. Transfer to a wire cooling rack and allow to cool for at least 4 hours. _________________________________________________________ With apologies to Ann, I got lazy! I also wanted all pecan, no chocolate. I omitted the chocolate and added another cup of pecans. I left the pecans as whole halves, I didn't chop, nor did I toast. I also didn't prebake the crust. I put the two cups of pecans in the chilled crust in the tart pan and poured the egg/sugar/butter/maple syrup mix (which I heated in the double boiler until the sugar was dissolved) over the pecans. I baked it at 350 until it was set and the crust was golden brown. About 45 minutes. The report from all who had a piece was that it was absolutely wonderful. Thank you Ann! Paula Deen's grits pie 3/4 cup water 1/8 teaspoon salt 1/4 cup quick-cooking grits 1/2 cup (1 stick) butter 3/4 cups sugar 2 tablespoons all-purpose flour 3 large eggs, slightly beaten 1/4 cup buttermilk 1 teaspoon vanilla extract 1 (9-inch) frozen pie shell, thawed Sweetened whipped cream and strawberries, optional Directions Preheat oven to 325 degrees F. In a small saucepan, bring the water and salt to a boil. Add the grits and cook for 4 minutes, stirring constantly. Add the butter and cook for 1 additional minute. Set aside and cool slightly. In a small bowl, stir together the sugar, flour, eggs, buttermilk, and vanilla. Slowly stir into the cooled grits. Pour into the pie shell and bake for 35 to 40 minutes, or until set. Serve warm or cold with whipped cream and strawberries as a garnish, if desired.

Creamy Rice Pudding PREP TIME 25 Min COOK TIME 20 Min Original recipe yield: 4 servings INGREDIENTS 3/4 cup uncooked white rice 2 cups milk, divided 1/3 cup white sugar 1/4 teaspoon salt 1 egg, beaten 2/3 cup golden raisins 1 tablespoon butter 1/2 teaspoon vanilla extract DIRECTIONS In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm. woo-hoo, another quinoa recipe! Thanks Laurel!! This looks good, and it's real easy. Saucy Rosemary Pork with Chive Mashed Potatoes 1 pork tenderloin, sliced into 1/2" medallions 3 tbsp flour salt and pepper 1 tbsp olive oil, divided 1 cup sliced mushrooms 1 cup beef broth 1/4 cup light sour cream 1 tsp chopped fresh rosemary Cook some russet or yukon gold potatoes. Mash and stir in warm milk, salt, pepper and some chopped chives. Keep warm. Meanwhile mix the flour with salt and pepper and dredge pork slices. Heat half the oil in a large skillet on medium-high heat. Saute the pork 3-5 minutes per side. remove to a plate. Heat the remaining oil, and saute mushrooms 5 minutes. Pour in the broth and bring to a boil while scraping with a wooden spoon. Reduce the liquid slightly. Return the pork to the skillet; cook 5 minutes. Remove from heat and stir in the sour cream and rosemary. Season with salt and pepper if needed and serve with the mashed potatoes.

Beer Bread
(I am going to try it today)

You use 3 cups buttermilk pancake mix and 1 (12oz) beer.
Mix and bake in loaf pan 350 for 50 min. or until done.

This is a nice side dish with roast beef or roasted chicken

Roasted Fingerlings and Green Beans With Creamy Tarragon Dressing

Makes: 4-6 servings Prep: 15 mins. Bake: 44 mins

1 Â½ lb. fingerling potatoes*
1 Â½ tbsp. olive oil, divided
1 tsp. salt divided
Â¾ tsp cracked pepper, divided
Â½ lb tiny green beans (haricots verts)
Creamy tarragon dressing

1. Preheat oven to 425 degrees. Cut fingerlings in half lengthwise and place in a large bowl. Toss with 1 Tbsp olive oil, Â½ tsp salt and Â½ tsp pepper. Place potato halves, cut sides up, in a jelly-roll pan. Toss green beans with remaining Â½ tbsp oil, Â½ tsp. salt and Â¼ tsp pepper and place in another jelly-roll pan.

2. Bake potatoes at 425 degrees for 30 to 32 minutes or until tender and browned. Remove from oven, and let potatoes stand in pan.

3. Bake green beans at 425 degrees for 12 min.

4. Arrange green beans round roasted potatoes on a serving platter. Drizzle with Creamy Tarragon Dressing.

*1 Â½ lb small red potatoes, halved may be substituted with a bake time of 35 minutes. 1 Â½ russet potatoes, quarted may be substituted with a bake time of 40 minutes.

Creamy Tarragon Dressing:
Makes: about Â¾ cup Prep: 10 Min

Â¼ cup buttermilk
2 tbsp fresh lemon juice
1tsp sugar
1tsp Dijon style mustard
Â¾ salt
Â¼ tsp coarsely ground pepper
Â½ cup olive oil
2 tbsp finely chopped green onion

1 tbsp chopped fresh tarragon

1. Whisk together first 6 ingredients in a small bowl until combined. Gradually whisk in olive oil in a slow steady stream whisking constantly until smooth. Whisk in green onion and tarragon. Use immediately or store in airtight container

CRANBERRY MEATBALLS

2 lbs. ground chuck
2 c. Pepperidge Farm stuffing mix
1/3 c. dry parsley
2 eggs
2 tbsp. soy sauce
1/4 tsp. pepper
1/2 tsp. garlic powder
1/2 c. ketchup
2 tbsp. minced onion
Salt to taste

SAUCE:

1 lb. can jellied cranberry
12 oz. chili sauce
1/2 c. brown sugar
1 tbsp. lemon juice

Mix all ingredients in bowl (except sauce). Blend well. Make small balls. Line balls in baking dish. Mix sauce ingredients in saucepan and liquify. Pour sauce over meatballs. Bake uncovered for 30 minutes at 350 degrees

I hate to say this TT, but I don't watch football! But we are watching the final Nascar race of the season! And if there's a party, I'm in!

Mushroom Quesadillas

1 cup thinly sliced onions
1 (6-ounce) package (2 1/2 cups) sliced crimini mushrooms or button mushrooms
1/4 teaspoon ground black pepper
4 (8-inch) fat free flour tortillas
1 tablespoon butter, melted
4 slices (1-ounce each) deli roast beef, or chicken, cut into strips
4 slices (1-ounce each) provolone cheese, cut into strips

1. Heat oven to 375Â°F.

2. Combine onions, mushrooms and pepper in 10-inch skillet. Cook over medium-high heat, stirring occasionally, until onions are softened (4 to 5 minutes).

3. Brush 1 side of each tortilla with butter. Place tortillas, buttered-side down, on baking sheet. To assemble quesadillas, layer each tortilla with 1/4 mushroom mixture, 1/4 roast beef and 1/4 cheese. Fold tortillas in half.

4. Bake for 10 to 12 minutes or until light golden brown and cheese is melted. Cut each quesadilla into 4 wedges.

Party on!
