Chicken Fettucine with Sambuca and Cranberries

(ingredients in RED)

Ahead of time (2-4 hours):

5-6 whole boneless, skinless chicken breasts, cubed

3 big garlic cloves, minced

 Place chicken, mixed with garlic in covered bowl in fridge.

2 ½ c whipping cream

 Place in jar in fridge

¼ c Sambuca liqueur

¼ c orange juice, frozen concentrate

 Place in jar in fridge

1 c freshly grated parmesan cheese

½ tsp nutmeg

½ tsp salt and pepper (+/- to taste)

 Place in jar in fridge

14 oz can artichokes, drained and chopped

¾ - 1 c dried, orange flavored cranberries

 Place in jar in fridge

Garnish: fresh parsley and orange zest

1 hour ahead of time:

1tbsp butter plus 1 tbsp olive oil

 In a large frying pan, sauté the chicken and garlic in butter and oil until barely cooked (undercook!).

 Remove chicken from pan and set aside.

 Save drippings in same pan.

Last minute:

1 lb fettucine, cook per directions.

Prepare sauce:

 In chicken pan juices, add cream, sambuca and orange juice concentrate and stir well.

 Add parmesan, nutmeg, salt and pepper, stirring until smooth.

 Simmer, stirring constantly for 5 minutes.

 Add chopped artichokes, cranberries and chicken. Simmer and stir for 10 minutes. ThatÂs it for the sauce.

 Carefully fold sauce into pasta and garnish with parsley and orange zest.

 Serves 6-8.

Excellent meal, presented beautifully. Rave reviews.
