I had a busy day today. The last day of our three day golf tournament. (I tied for first in my flight..YEAH!) We had a big lunch and I'm tired and not hungry but I cannot go three days without making dinner for DH so I'm making curried chicken salad. I cook up chicken when it's on sale, cut it up and freeze it on a cookie sheet so making the salad won't take very long. I was going to make the Ditalini shrimp salad but I'm too tired to even make that and you know how easy that is.

Grilling italian sausage and peppers. Have potatoes/onions/butter wrapped in a foil pack and on the grill now over indirect heat. Will go over direct at the end to brown the potatoes a bit. We're about 83 and sunny. Didn't make it to the pool today, had lots of weeding in the garden to do.

I'm soaking up a beautiful day here in Ohio. The high has been in the mid 70s, a light breeze, and I have windows open... giving the ac a rest, at least for a few hours. I could take this kind of weather, but alas by Thursday, we're to be in the 90s again, with humidity.

I had chicken livers w/mushrooms, wild rice/barley, and creamed corn for my evening meal. I'm glad I like chicken livers as they are very easy to fix and cheap eating.

When I saw those pretty onions earlier I decided then I was making potatoes obrien with some sauted vidalia onions added in and some sliced up smoked sausage then topped with some grated colby jack cheese. I do this in the skillet and in the oven just depends on if I want to turn on the oven.

Glenda, those gingerbread muffins sound great. I'm pretty sure I have a recipe for them, but my seasonal brain thinks they're only good in the fall/winter. I need to re-think that! Sure hope you do cool off.

Georgysmom, no wonder you're tired. After reading your post yesterday, I'd say you have a whole lot of stamina. Congratulations on your tie for first. Do you get a prize? Medal? Loving cup? :)

Shirley, I don't know why I've never made chicken livers. When I've wanted them, I usually just go to KFC. I need to look up recipes (wanna share yours with the mushrooms?) and make them myself.

Kathleen, curry over rice doesn't sound same old/same old. It sounds delicious! Has your exchange student gone home now? I know you enjoyed her and but said you aren't doing it again. Have you changed your mind?

Patti: No 'recipe'. I trim the livers of the excess fat, etc. Put oil in my skillet, toss in the livers and a can of mushrooms, season with organic poultry seasoning that I get at a health food store. I fry about 5 to 6 minutes per side, then lower temperature and put a lid on for a few more minutes. See what I mean about being easy. (I didn't know KFC had them.)

My special needs sister, Annie, got me to making these. I never liked ANY liver. This was one of her favorite foods when she lived at home and she asked me for them.

I made pork roast and peotatoes. Kind of hot here for it but I had to use it before it spoiled.

Come to Alabama and go to The Irondale Cafe, which has awesome fried chicken livers, and I get them to put a tad amt of brown gravy on them. Ymmmmmmy!

Your curry sounds good Kath. You have it often so it MUST be good!

I used up the 2 leftover salmon patties, with fried potatoes and coleslaw. Was still hungry so am just taking bran muffins out of the oven. Boy are raisins ever expensive!

Raven, that sounds so good I think we'll have it tomorrow. I have frozen hash browns in the freezer and everything else I need to make it. Thanks for the good idea!! Hope you enjoyed it.

Bengardening, I haven't had pork roast for so long. I like it with Nita's recipe with the cherry preserve sauce over it. I don't know how you can stand to be in the kitchen at home after being in one all day. You must be a saint!!

Glenda--honey, if I go to the Irondale Cafe, I'm just having fried green tomatoes and lots of corn bread. I'm still amazed I really liked that corn bread with no sugar. :-)

Shirley, the KFC livers--if you catch them at the right time--are crunchy outside and tender inside. Do you bread yours?

Jasdip, I love bran muffins right out of the oven with melty butter. I haven't bought raisins lately as they seem to last a long time around here.

No breading on my chicken livers....just plain. My Mom used to cook hers in water first, then roll in flour before frying.

Oh it was wonderful, those sweet Vidalia onions add some extra taste.
I did it in the oven this time so I didn't have to keep stirring and checking.
I used eckridge smoked sausage, pretty mild.
We love this stuff. I do it with left over ham too.

I went the easy route and had mushroom turnovers (frozen, from TJs). I know.....not healthy. I'm going to have a Vitalicious double chocolate muffin in a bit.

I get to pull a double today and hoping we get done before 2AM. No cooking to speak of today.

I need to go grocery shopping!!!!!
