tell me I can...bread baking?

I've run out of time....well almost..poor planning!!

I have a bread dough that I started that is almost to the shape and rise stage..But I need to go out for a few hours..

I have the time to shape it and put in the pan..but it is possible I'll be gone longer than an hour..

Can I put it in the fridge at that stage for up to 2 hours..pull it out and let it do it's final "shape" rise???

Please tell me it will work okay...

I've done cinnamon rolls over night this way..but didn't know if it would work for basically regular bread???

(it's got barley flour, wheat flour, white flour and dried apple pieces in it)
