Catering Help, Please

Saturday our good friends are having a wedding celebration dinner and asked me to help with planning, setup and do all the food, from scratch. My family and I are guests for dinner. A couple of my friends will serve. There are 30 guests. The dinner is buffet style, in a tent. Mind you this is Indiana. It could be cold, rainy and dark after 7p. They will use heaters (noisy?) and lights, but it doesn't seem very nice. I offered our house, but the groom wants everything at their country home. They were going to have a bond fire, but Indiana is in a drought. There is an open burning ban.

Is the menu alright? Quantity of food? I've not done anything like this before. What am I not seeing, forgetting? Suggestions??

Renting: tent, heaters, 5 round tables (seats 6), 2-6' serving tables & linens, china, flatware, glassware, chafing dishes, 55 cup coffee maker.

Guests arrive by 5p, dinner at 7p...Bride insists; isn't this too long to wait for dinner?

Menu-Vegetarian (except for sausages)

fruit & veggie stick appetizers

grilled small sausages (bride's son wants to do this)


spinach lasagna (homemade pasta & sauce) Using 4 half-pans in large chafing dish to serve. Make Friday, bake Saturday? Enough?

green salad (field greens, candied pecans, mandarin oranges, dried cranberries, raspberry vinaigrette) Simple green salad better choice? Make just before serving?

fresh green beans (onions, mushrooms, red peppers, dill) or asparagus if green beans don't look good. Snap beans & cut onions and peppers on Friday? prepare just before serving?

hard rolls Bake Friday?

carrot cake-Bride's request. Bake Friday?

chocolate cake w/ice cream Groom's request for cake, bride's request for ice cream. Bake Friday? Isn't ice cream too much with such a heavy entree?

coffee, non-alcoholic punch, champagne toast, wine

I don't have a freezer to make and freeze cakes or lasagna. Home has a radiant heat stove, small kitchen. Can the lasagna be baked at their house, just before dinner is served?

We are setting tables, decorating, flower arranging Saturday morning.
