Wish me luck - cooking frenzy!

I'm starting cooking tonight for the party I'm going to tomorrow. I shopped last night at 99 Ranch Market - a Chinese supermarket.

I am making 3 dishes -- Thai-style basil fried rice, Vietnamese shrimp summer rolls (Goi Cuon), and something I've never made - Thai green papaya salad (Som Dum). (I watched how to make it on Youtube.)

Tonight I will cook the rice, prep the veggies, make as many summer rolls as I have ingredients for (I bought 40-ish wrappers), and make the papaya salad.

The summer rolls will contain rice noodles, chopped spiced pork, cucumber, carrot, cilantro, mint and shrimp. I hope I can make them look pretty.

Tomorrow I will fry the rice and put everything in nice dishes.

I'll take pix for y'all.

Gina, I was just reading in Rick Bayliss' book not to prepare Summer rolls to far in advance as they have a tendancy for the "skins" to dry out..so wrap them tightly for storage!!

Sounds delish..enjoy your party!

Brad - something else occurred to me this morning. You've mentioned health issues that prohibit you from having too much salt. And you've also mentioned using the packaged onion soup mix in several dishes. Something occurred to me that might be a good solution. Penseys offers two types of dehydrated onions. One of them is called California Toasted Onions. I think these onions might provide the flavoring you find appealing in the onion soup mix - WITHOUT any sodium. My mother has heart issues and cannot have any salt. For years she also made many recipes that contained the package of onion soup mix. I bought her a package of the toasted onions from Penzeys and it is a great substitution. Do you have a Penzeys near you? Of course Penzeys sells on line also. However, a trip to a Penzeys on a cold winter day might be a really fun thing for you and your Mom to do. All of their seasoning and spices have a sample jar you can smell. Thank you both for your good wishes. Thanks also for the advice about Crema Marfil. Good to know it doesn't really take much upkeep. I absolutely love the look of it. And I found a great picture of what I think is Crema Marfil with Typhoon Bordeaux, so I think it would work. (Photo link at the end, since I don't know how to post someone else's photo here.) The other tile for backsplash that makes my heart sing would be an onyx -- either honey or white onyx. Same questions about upkeep. KItchen is now a big empty space, only the fridge remains. We are "cooking" in the study (microwave, toaster oven, Cuisinart Griddler) At least we have wine in the fridge ;-) Here is a link that might be useful:

I thought I would place them on top of lettuce, lay some damp paper towels loosely on top and wrap it all up with plastic wrap. Do you think they will be okay overnight?

Sounds delish. I dunno about the papaya salad though--report back! I love Thai fried rice, that's my "go to" version of fried rice. And spring rolls are also favorites. I never make them though, due to all the prep, so you must have some special, lucky friends!

Gina, I love that 99 Ranch Market. So many unusual things I can't find other places.

Your choices for party food sound excellent and I look forward to seeing pictures.

Gina, I hope you took pictures. I'd liked all the recipes. One of my favourite Thai restaurants in Toronto use to serve a green mango salad that was amazing.

Hi kids! Yes I've been extremely busy plus i had terrible hangover today!
Tomorrow I'm busy all day and going to see Steely Dan after work - so i'll post the few pix i remembered to take in a couple days.
