New Recipe, Wish Us Luck!

Hi everyone,

Two days in a row, my Dutch Oven is being used! Yesterday we had the chicken I posted about before and now trying a recipe of the Pioneer Woman's (Ree Drummond): Tangy Tomato Brisket. I have never had brisket before but I have heard it's delicious! Funny thing is that she has a new episode on this Saturday and the brisket is one of the recipes she'll be making. :-). It's only three ingredients!

Well, we bought the wrong kind of brisket. It was one that was prepackaged and to be used for corned beef. It came out VERY salty, so it was inedible. I am not disappointed in the matter as brisket is a cut of meat we are not familiar with cooking. The fried potatoes and green beans were good though lol.

Fairegold, Don't feel guilty or bad about being firm with her...sometimes that is just what they need. When my mom first moved in, she was fighting me on everything and I know it was her fight for independence, her last shred of it and I was aware of it and tried so hard to respect her feelings, but when she pushed me just too far one day, we got into it and her reply to me was "what are you gonna do about it?" I said "you'll leave me no choice but to put you in a nursing home" and she backed off quickly. Of course, I couldn't sleep all nite, feeling so guilty, but I did not take it back. The next day, I called the social worker and told her what happened and she told me it was the right thing to do...I had drawn a line, letting her know she couldn't push me beyond that point. You know, we are only human, we can only withstand so much...right or wrong, good or bad, sometimes we say things...God bless you for being there for her all the time....let it go....breathe....be well, Mimi

We're about two weeks away from putting my mother's townhouse on the market. It's in Mercer County, NJ, and the market seems tough but not dead. The timing is terrible, but she needs to move to her retirement community immediately. She recently totalled her car and has decided not to drive anymore. My siblings and I are busy purging, packing, painting and staging. There are several comps in her neighborhood priced in the $260k range. She's planning to list at $240k and will go down to $225k. Her neighbors will hate her, but she wants a quick sale. So far she's interviewed two real estate agents. The first one we met called a few days later and offered to cut his commission to 5%. I hope this is over quickly. I'm pretty sure you posted a while ago that you were going to list it.... Now, I don't know why, but I went to realtor.com, put in the specifics (3 bed / 2 bath, price $225-$250) in your mom's zip (08628) and came up empty. For some reason it is not being picked up on realtor.com & you need to find out why. I ended up putting the address into google, came up with a listing on Trulia, then there's a button that says see more photos & details, when clicked it brings me to the KW page where I can get the MLS #. Going back to realtor.com I am able to find it using the MLS. I checked the listing out at my agents site.. see there are 12 pictures. I'll try to look at it more later but I think I like the stove pic better then the kitchen pic they are using. Good luck, you don't seem to have much competition, which is good.

Linda, beautiful rose, which one is it? I so need to get my garden going. My poor roses have been in pots for a long time. I think that a 2nd opinion is a good idea and will most likely do that. Sparksals, think I sent you a DM through citydata a month or so ago, not sure if you got it. Was checking in to see how your house is doing. Lyfia, yes you saw me posting yesterday. I wanted to come here in the morning but had to clean out emails 1st. Amazing how they pile up in that short of time, but being subscribed to as many real estate sites as I am, it's to be expected. I then sat down in the afternoon & managed to post on one post here before my son got up and wanted to try to get the whole house internet going. We paid for a fancy system that is supposed to run the internet, TV & phones in every room but for some reason it isn't working. I ended up having to throw the router & modem in the basement then had to check each line to see what room it went to. Very time consuming. I was hoping my son could handle it himself (he installs DirecTV) but he couldn't. We made a great team though. My hubby's son will come tomorrow and see what he can do. He works for Comcast & hopefully has seen this system before. I'm sure I could figure it out if I had the time but I don't. Today I decided I'd had enough of the new carpet going all over and started vac'ing to find small black ants pouring in through the front door's bottom plate. I actually almost managed to run to the garage & basement to see where all of my sprays were. Thankfully some of the unpacked boxes are marked pretty good. I don't share my house with ants or mice so they need to get out and do it now or they will be sorry. lol For the most part the new house is nice but we're finding things all over. The electrician did a crappy job wiring the house (1 light switch in a bathroom is buzzing), hubby & I could have installed the carpet better, there is spackle dust all over as well as paint drips and globs of spackle in various spots. Trying to figure out & remember what light switch works what, and find which outlet is upside down so that we can put the lamps on those, then to find out that it's only the bottom plug that uses the switch, stupid stuff like that that slows you down and makes the experience not as good. We were told to call the electrician for a house demonstration and for them to explain the wiring package yet they can't fit us in for a week. By then we won't need them. The whole experience with this company is probably a 5 out of 10. In the beginning everyone was great, then around late February that stopped. We didn't get walk throughs we were supposed to have and it seemed our sales lady was always off on days we needed her. Back in February we had a low offer and could have made it work had the builder given us $7,000 but they refused. Our guess is someone may have been interested in the house, we don't know. With all of the builders hurting, this one wasn't working with us & in the end left us with a pretty bad opinion of them which is worst today as we found out they've been laying people off. One thing I am thankful is that it all worked out in the end, people that put deposits on another builder aren't doing as well because they can't sell their house and are losing their $60,000 deposit and are being charged the price decreases while the house is listed. I made a long post at the rose forum yesterday morning and will copy/paste it here. What a day we had Tuesday! We got through Tuesday with a lot of luck. We were nervous everything wouldn't fit in one moving truck and it didn't. The mover had to bring a 2nd truck which they had around the corner or something. Over the weekend, we ended up loading the plants in a 26 foot U haul - even stacking the plants there wasn't enough room so when we got to the perennials I just threw plants one on top of the other and figured they would grow back. We left hubby's desk because it would snap in half had they moved it and my daughters bed was broken (hubby) so we'll have to go shopping. Once I get my money from my dad's estate I will take her for a new bedroom set. Turns out hubby thinks he left stuff in the desk :( Our buyer walked through the house not knowing if we'd be out by closing. Hubby ended up leaving with my car, then came back for me. My agent called, I told him that I was going to vac the house but the power was shut off. The movers finished up just before he was ready for me. I had enough time to go through the house, close windows & change my clothes. Hubby called he was really upset. Turns out the buyer thought we'd leave the electric hooked up for them. How silly. Their agent is the wifes grand father, he knows better, for them not to call all of the utilities was something he should have told them to do. The things that came up in the inspection ended up working out after all. We have a crawl space, at one time the owner before my hubby dug it out and put in a service pit. It's 7ft tall by 20 ft wide, about 30 or 40 ft long and holds the water heater, furnace & softener. The old owner put up concrete blocks to hold the dirt in, but when he put them in it wasn't level. You can clearly see that it isn't a load bearing wall and there were no cracks in it to suggest it's moved. Their inspector actually wrote it was amateurishly put up, but it ended up being our problem. The title company had already put the agreed on terms in the closing sheet, so they were forced to accept a $300 deposit my hubby gave to the contractor we picked. The rest of the total repairs was credited to them so if they decide to use someone else, they are $300 short. This was a huge stresser. They ended up calling the contractor Thursday and decided they didn't like him for some reason or another and wanted to change what was agreed on. By the time we got the phone call it was after 6pm on Friday, the start of a national holiday. I don't know how either of us held it together all weekend, we were so stressed. We fully expected not to close Tuesday due to it. The funny thing is I don't remember them ever going down to look at the service pit the 2 times they were there, even when their inspector was there. When they came for the walk through Tuesday, you'd think he would climb down the ladder to look for himself, nope. We also offered for them to come and look at it weeks ago, they never took us up on the offer. We got screwed with our cabinets and ended up with almost 1/2 of what it was worth. In hind sight, we should have had our attorney deal with it months ago to have them take them out. Yesterday I couldn't even put the kitchen together, I put a few things away but decided I'd open boxes in case we needed something & would deal with it today. Once the movers left yesterday, my daughter & I set up all the bedrooms, including computers & TV's. Comcast had come early in the morning, before the computers were unloaded so we couldn't check to see if all of the rooms had internet & we didn't. Hubby and my son worked on unloading the plants (about 500 pots) then made the hour drive to return the truck. By the end of the night I set mine up (which is supposed to run the wired rooms) but the net in the bedrooms wasn't working so we have to get the people that wired the house out today. My son was upset, he couldn't play his Xbox so I told him to bring his stuff to the computer room & hook up there since it's the only room that has internet. Once he did that he was happy. It's going to be another long day. I should have started already but sitting down feels too good. lol You would think that the house would be pretty clean but it's not. The kitchen cabinets are pretty gross, there is dust all over them. Hopefully by tomorrow most things will be put away that we use daily so that I can start looking in the rest of the boxes for stuff I'll need. I still haven't found my business card holder or tools. While we tried to keep everything organized, when the movers came to unload yesterday boxes went in the wrong rooms so we have to deal with that. The top floor is done, I have piles of boxes that need to go to the main floor or basement, I don't doubt stuff in the main section needs to go up. It will be 10 years before we do this again. I don't know how people do this every few years. Moving is the pits. I can't wait to get outside and deal with the gardens. A lot of the roses started blooming because the inside of the truck was hot.

RECIPE: New Year's Day Good Luck Recipes

In the South, we usually have some kind of pork, blackeyed peas, greens of some sort and maybe cornbread (?) on New Year's Day to insure our luck for the coming year. I think the greens are a symbol of wealth/money. Here is my favorite recipe for cooked greens: My Sister's Greens 2-3 16 oz. bags of frozen mixed greens, or a bag each of turnip, mustard, and collard greens (or kale or spinach) Cook greens in water to cover for 25-30 minutes per package directions if using frozen greens. [Cook fresh greens (a big pot of them) that have been chopped in boiling water until done to your liking.] When the greens are cooked, drain very well in a strainer or colander. Put back in the same pan and turn the heat onto very low. You want to evaporate all the water left on the green so that they are very dry. When this is done, add: 1/4 cup extra virgin olive oil 1/4 cup maple syrup 1/4 cup apple cider vinegar Pour each over the hot pot of greens and toss really well for several minutes. This tossing is really important! Use two large spoons to toss. You don't want the greens to be dripping liquid, but to be quite dry with just a hint of the oil, syrup, and vinegar. Taste the greens and add a little salt and a bit more vinegar if you think they need it (I always add a little more vinegar). Serve the greens right away while they are still hot. When I make a half a package of the mixed greens, I use only 3/4 TB each of the oil, syrup, and vinegar. You add the equal amounts of each, but the size of the amount will depend on the size of the pot of greens you are making. Happy New Year! Teresa

Brad - so sorry you did not realize you purchased a "corned" beef. I looked up the Pioneer Woman's recipe. The recipe calls for adding a bottle of ketchup and a package of onion soup to the brisket.

Oh dear! That would be a lot of salt combined with a corned beef brisket. I wish you had known.

A corned beef brisket cooked with small red potatoes, cabbage, and carrots is one of my favorite meals - and a favorite of many people for St. Patrick's Day.

Teresa, my mom and dad love corned beef and cabbage and mom always bought the kind in the can. In the book, Ree says you can also use chili sauce, which is what we did.

Dcarch, this was the saltiest meat we ever ate. With the way I have kidney stones, I'm not going to take a risk. Mom'll just probably throw it out.

Many years later my husband confided in me that it had been so salty that he and his friend each took one bite and threw it away. A little while later they saw a stray dog sniff at it, lick it, and run away!
I'm not sure where you live, but I'm near Vancouver B.C. and I never see brisket in the stores - just the packaged corned beef that you bought. You can't go wrong with fried potatoes!

Brad, I'm sorry to hear that. I love corned beef and I like hash better than the corned beef dinner, but it can be pretty salty.

If you want to cut salt, I wouldn't use onion soup mix either, that stuff has a bunch of sodium!

If you do find a plain/uncorned brisket, here's a good recipe and not a whole lot more ingredients, but way less salt.

Simply the Easiest Beef Brisket

Prep Time: 10 Minutes
Cook Time: 4 Hours
Servings: 6

Ingredients:

1 (3 pound) beef brisket, trimmed of fat

1 medium onion, thinly sliced

salt and pepper to taste

11/2 cups orange juice

1 (12 ounce) bottle tomato-based chili sauce

3/4 cup packed brown sugar

1. Preheat the oven to 325 degrees F (165 degrees C).
2. Season the brisket on all sides with salt and pepper, and place baking dish. Cover with a layer of sliced onions. In a medium bowl, mix together the juice, chili sauce, and brown sugar. Pour over the roast. Cover
3. Bake for 3 hours in the preheated oven. Remove the cover and bake for an additional 30 minutes. Let the brisket rest and cool slightly before slicing and returning to the dish. Reheat in the oven with the sauce spooned over the sliced meat.

Fried potatoes are always yummy!

We bought it at Wal-Mart, though I forget the brand. They sold two types of it. You had to cook it and season it with the spices, but it must have been salted beforehand. All of the other recipes I've used the onion soup mix with have been very delicious. The Dutch Oven Baked Chicken uses it in the barbecue sauce.

Jane, I live in Central PA, amongst the Alleghenies. It's gorgeous here :). I have seen recipes for stew similar to yours and I remember people saying that it would be awfully salty to mix all of that together for a few recipes I was considering making. I have a cube steak recipe that calls for onion soup mix and golden mushroom soup. It tasted heavenly!

Annie - I wonder how that sauce would be over pork country-style ribs? I'm thinking I'm going to try it.

Brad - I've had this recipe for many years, but have never been able to locate a regular beef brisket in our local stores to try it. I'm guessing I'd have to special-order it from the butcher (which usually means BIG $$$).

THINGS GO BETTER WITH COKE BRISKET

1 (4 to 5 lb.) beef brisket
2 Tblsp. vegetable oil
1 cup chopped onions
1 cup chopped celery
Salt and pepper to taste
2 tsp. paprika
2 garlic cloves, crushed
1/2 cup ketchup
1/4 cup hot water
1 pkg. dry spaghetti sauce mix
1 Tblsp. dry onion soup mix
1 cup Coca-cola

Place meat in a large roasting pan and brush with oil on all sides. Sprinkle with onions and celery. Season to taste with salt, pepper, and paprika. Place garlic on top. Mix ketchup with hot water, onion soup mix, and dry spaghetti sauce mix. Stir to dissolve. Add Coke. Pour mixture over meat and cover with foil. Bake at 350 degrees F. for 2-1/2 to 3 hours, basting every 20 to 30 minutes. Serve sliced when done, or slice entire roast and reheat in gravy the next day -- 30 minutes at 350 degrees F. for extra-tender meat slices.

Corned beef is corned--that is, it's pickled in salt brine. It's always very salty. You usually bring it to a boil, then drain then start again with fresh water, simmering until tender and adding potatoes, onion, carrots and cabbage after the meat is tender. At least that's what I do. If you still have it, try that, though Of course,you don't have to add the veggies.

Oh Brad, what a shame!
BUT!
You can chalk it up to a learning experience,
That's always a good thing.

Corned Beef brisket,
Cooked with carrots, onions & potatoes
And the spices included with it,
Is a delicious meal.
And quite different from the canned variety.
But finding a corned beef here
is next to impossible.
Except around St Patrick's Day.

Now plain ol' brisket
Is available and plentiful
all the time.
Seems it is a 'staple' of South Texas cooking.

Pat, the original recipe called for 12 ounces of beer. I don't like beer, so first I subbed beef broth, then orange juice. The kids liked the OJ best.

Brad, I can tell you that I've sure never complained about fried potatoes. Add some onions and I'm double happy. Of course, I don't think I've ever complained much about potatoes in any form!

Brad - when you get ready to try Annie or Pat's recipes - I would like to suggest you call the meat department at Walmart or wherever you plan to shop. Tell them what day you are coming and ask that they have a brisket for you. They may be cutting up the briskets and selling them for stew meat. Brisket cuts do not sell well in all parts of the country. If you call ahead I am sure they will set one aside for you.

Brad - something else occurred to me this morning. You've mentioned health issues that prohibit you from having too much salt. And you've also mentioned using the packaged onion soup mix in several dishes. Something occurred to me that might be a good solution.

Penseys offers two types of dehydrated onions. One of them is called California Toasted Onions. I think these onions might provide the flavoring you find appealing in the onion soup mix - WITHOUT any sodium. My mother has heart issues and cannot have any salt. For years she also made many recipes that contained the package of onion soup mix.

I bought her a package of the toasted onions from Penzeys and it is a great substitution.

Do you have a Penzeys near you? Of course Penzeys sells on line also. However, a trip to a Penzeys on a cold winter day might be a really fun thing for you and your Mom to do. All of their seasoning and spices have a sample jar you can smell. And there are free recipe cards and a free catalog which also contains recipes.

Just to second what Teresa posted. My husband is on a salt-restricted diet, and I use both the Penzey's toasted onion flakes and their toasted onion powder for any recipe that might have originally called for dry onion soup mix. Combine the onion products with some sodium-free beef broth granules, and I've got a perfect substitute. I use that combo to make the famous onion soup dip but with much, much lower sodium content and just as tasty. It also works for stews, pot roast, casseroles, etc.

I can eat salt, and the good news is since I started taking magnesium, I've had a lot less trouble with my kidney stones :-).

Annie, we add onions to our fried potatoes. No better way of eating them!

Teresa, we're going to check the local butcher shop and see if they have any briskets for sale. We do not have a Penzy's near us and I've never heard of them until now.

Well Brad - you need to click on the link and sign up for a catalog. You are in Pennsylvania - right? Penzeys has two stores there - Philly and Pittsburgh. So if you are not near either city the next best thing would be a catalog. I think you would really enjoy reading the stories and recipes in the catalog. And who knows? Maybe you will develop a recipe and you can be featured in the catalog one day!

I agree about Penzey's, Brad. Get a catalog mailed to you, and there's nearly always a coupon for a free spice on the cover. This time it's cumin.

I have a store in Grand Rapids, I love the place. Their Vietnamese cinnamon is great, I use it all the time and their spices are mostly cheaper than Walmart.

Plus they have stories about different families and people and recipes from them. Our own Chase/Sharon was featured in one of their catalogs a couple of years ago.

Plus, they are an American company, based in Wisconsin, their customer service is excellent, their product is excellent, it's just a great company.
