Pineapple Upside Down Cakes

For some reason, I've had a hard time logging into GardenWeb these days -- it takes fooooreeeeeveeer to load a page. So I haven't been on very much, lately.

But I had to share these sweeties with you! I had a taste for pineapple upside down cake, but an entire 9x13 pan seemed like just too much in this heat.

So I made pineapple upside down cupcakes, in the jumbo muffin tin. I love them! Even if they do look a bit like perky little pasties....

I had just enough batter and pineapple rings for a 9x9 pan that is almost as much topping as cake. Now, what to do with a nearly full bottle of maraschino cherries....

They look delicious! The cherries will keep almost forever in the fridge! I mix the juice with horseradish & some brown sugar heat slightly until sugar melts, and baste ham slices on the grill. A quick summer dish.

Those are lovely! I think it's a great idea to make them into cupcakes. I used to make PUDC when I was a pastry chef, but I omitted the cherries, and so I can't help you with the leftovers. I think you can put them in a Tom Collins, however, or a Cherry Lime Ricky. They also show up in fruit cake recipes, I think, although I've never made one.

Cyn - I planted one in full sun (2008) and it melts by mid summer. BUT on the second flush it comes back bigger and better! I'm hoping this year, it'll be more tolerant to the sun, since it'll be larger. And yes, I water.

It will be yellow with a green margin. Pineapple Poll is solid green. Pineapple Punch is the reverse of Pineapple Upsidedown Cake. Pineapple Punch is the all yellow version. There is a new one out now. I think it is named Pineapple Ripple. My PUC is doing ok, my P Punch went a little backwards after last years heatwave. Thank you all for the responses. I did wait about 8 minutes even though the recipe says 5, so that was the problem. I know because I made it again (just had to see if I could do it! I will freeze a lot of it)(found a different recipe, but for the same size pan) and turned it out the instant it came out the oven. It came out perfectly! I have made it in a cast iron skillet when I was teenager at my grandmothers house... I don't own one, but maybe it's time to consider buying one! The ugly one tasted OK, but it was dry... I just pour milk over it when I want a piece. Gldno1, I also tried to stop baking (and stop attending this forum) in an effort to lose weight. I was still just as fat, just got sad on top of it. I'd rather be plump and happy than skinny and miserable! I enjoy baking (and this forum) and cannot stop!

Great idea! I will try that next time. I LOVE pineapple upside down cake, and I found a GREAT recipe when I was going so crazy over those yellow cake martinis that I decided I'd better find some other recipe with pineapple, vanilla, and almond flavors (this recipe has almond extract) before I became an alcoholic.

I don't like maraschino cherries, so I used pecan halves instead. Doesn't look quite as cute, but tastes better to me (and no "bleeding" on leftovers).

What a good idea Alison! I haven't had pineapple upside down cake for years but I know I liked it very much.

For a lot of years, pineapple upsidedown cake was my quick, emergency dessert!
I would butter an 8 inch square pan, drain a can of pineapple....either crushed, or tidbits, mix the pineapple with about 1/2 cup brown sugar....mix up one of those Jiffy cake mixes, using pineapple juice for some of the liquid,
pour the pineapple and sugar into the cake pan....add marischino cherry halves if I had them...or pecans if I had them...or not.
Add the cake batter, bake and when ready...cut into squares and top with ice cream or whipped cream.
If I had the ingredients, took me 5 minutes to do! And when the kids were at home I always had dessert...

lindac, that Jiffy recipe is almost exactly the way my mother made pineapple upside down cake -- hers had pineapple rings on top. It was also the ONLY cake I remember her making.

If Jiffy didn't have animal shortening, that's probably the way I would make it today.
