Why did my pineapple upside down cake do THAT? (pic)

OK... look at the picture, then stop laughing, clean up the milk that you just expelled from your nose and give me some help! Please!

I've made pineapple upside down cakes before and they have NEVER done this! I know I followed the recipe exactly... I measured carefully and didn't leave anything out. Well.. I didn't use any pecans, and I used 9 pineapples instead of 6... but other than that I followed the recipe. The "topping" looks undercooked, but the cake part is WAY over cooked! I have two oven thermometers, so I know the oven wasn't wrong. I'm going to eat this myself, but thank goodness I wasn't going to give it to someone! I would have had to throw it away and make another one.

This has been a terrible week in the kitchen for me. I also tried to make another cake earlier in the week and I did it in silicone pans and they didn't hold their shape... both layers were different shapes (and neither of them were a circle!). I've always hated the silicone pans and I will throw them away as soon as I buy metal ones to replace them with. Whoever invented them should be tortured by bakers around the world.

This was the recipe I used:

Made with pineapple, marashino cherries and pecan halves.

Cook Time: 35 minutes

Ingredients:

* 3 tablespoons butter

* 3/4 cup brown sugar, firmly packed

* 6 slices pineapple or 1 can (20 ounces) can of drained pineapple chunks

* maraschino cherries

* pecan halves

* 1/2 cup butter

* 1/2 cup sugar

* 1 egg

* 1 1/2 cups all-purpose flour

* 1 1/2 teaspoon baking powder

* 1/2 teaspoon salt

* 1/2 cup milk

Preparation:

In a 9-inch square cake pan, melt butter; sprinkle with brown sugar. Arrange pineapple and cherries and nut halves on sugar, making a design.

Make cake batter.

Cream 1/2 cup butter; gradually add 1/2 cup sugar and beat until light and fluffy. Add egg and beat well. Add sifted dry ingredients alternately with the milk; beat until smooth, ending with dry ingredients. Pour over pineapple design. Bake at 375° for about 35 minutes. Let cake cool for about 5 minutes before turning out onto a serving plate. Serve warm with whipped cream, if desired.

I'm not denying fault... It could have been me and not the recipe, but I know I didn't leave an ingredient out. Anyone have a better recipe, or a clue as to why it did THAT?
