need your help again please

First thank you all for your help, both this year and last. Being able to do this was really important to me on so many levels and I appreciate all you folks did to help me make it happen. Here is the rub: My cancer is back and I will be operated on in the morning, so my canning is over most likely for this year.

There is a frost coming I need to be able to protect what I can today. Do I pick, cover or will these things be ok if left as is:

Beets

Buttercup squash that hasn't hardened off(skin doesn't pass fingernail test)

Pumpkins that are still green (vines are still growing)

I have pole beans that I need to save the seed, we have had several inches of rain with more expected this afternoon, so that slowed up the drying process. Then in the next couple of days we are going into a cold spell. The only thing I can think of is to pull up the vines with the beans the closest to dry and put them in the garage to dry. The beans on the vine just aren't ready, but if I leave them out and they get hit with a frost, will the seeds be ruined?

I think the carrots and parsnips will be ok just left in the ground.

I was thinking maybe a sheet over the eggplants???
