Question about wine substitutions in canning

Hi everyone.

I have a question and have done a search and can't find anything. I have seen several recipes posted on here and also a few recipes in my ball book that use various types of wine in the recipe. I would love to try these recipes, however we do not use alcohol for anything. I know how to substitute for regular cooked foods and such, but is there an acceptable substitute for canning?

I am not sure about the acidity levels of the purple grape juice and the white but could I substitute them for red and white wine respectively and be safe? or maybe half of a vinegar and half juice?

If anyone can offer any help or suggestions to me I would greatly appreciate it.
