Tomato Peach Salsa questions

Hello, I want very badly to make a tomato peach salsa, but not badly enough to use an unsafe recipe. I have found two that appeal, and I'm requesting your input on safety.

The first is the Peach Salsa on p 121 of Stephen Dowdney's "Putting Up". My concern is this recipe requires me to test for pH myself. I'd like something a little more certain. In general, how safe are the recipes in this book?

The second recipe is from food. com and I've linked it below. Superficially, it appears to have a lot of vinegar and lime, but no mention of having been tested for safety. Generally, I'm finding lots of "canning" recipes from people who know nothing about safety in canning, and I fear this may be one of them. Your thoughts please.

And if anyone can refer me to a tested tomato peach salsa recipe, I'd be very grateful.
