Making syrup and getting the right viscosity.

Should it be done my temp or trial and error for berry syrups such as rasp or strawberry?

My first batch of rasp syrup used 10 oz water 2 cup sugar and 12 oz froz rasp and boiled for 10 min. Came out great, but kinda of thick Made about 18 oz.
