Extra syrup

In a previous post I mentioned that I usually don't have enough syrup for various items and Carol said that happens to her too, and she often makes more syrup. I am about to make spiced apple rings. So, I can just make more than the called-for syrup, expecting that I might need more? In that case, I really could do any amount of apples - the recipe calls for 12 pounds, but I could do any amount so long as I make enough syrup, right?

Another silly question - how tightly can I pack my jars into the canner? I now use my pressure canner as a boiling water bath, I like it better than my old black one. It has a rack to keep the jars off the bottom, but no rack to separate the jars. It claims to hold 10 pint jars - yeah, right! I can only fit 9 in and that is packing them tightly against one another. Is it okay to pack them tightly like that or do they need room to move around?
