Recipe for fudge-like frosting w/ cocoa powder?

When I make a yellow cake, I prefer it with a chocolate fudge-like frosting. I like to use a recipe from an old red & white plaid cookbook that makes a perfect chocolate frosting -- it's like a not overly-sweet softened fudge. I love it, but it's made with baking chocolate and I haven't been able to find any in ages! Does anyone have a recipe for a frosting like that, but made from cocoa powder? I have really good quality regular and dutch-processed. And cheap stuff too, if that matters. lol!

Here's the one I used just last week from my ancient Betty Crocker cookbook. As you can see from the stains, it's tried and true.

I used half & half instead of milk and added a few more Tablespoons than the recipe calls for - added 1 at a time - and it turned out really luscious.

The amount of cocoa to sub is circled. I sifted everything first.

I've made this recipe many, many times. They are really good. I often add Christmas sprinkles and give them as gifts around the holidays because they cut really nice and work well in those waxed treat bags. Chocolate Chip Brownies (from Taste of Home GrandmaÃ¢ÂÂs Favorites) 1 cup butter, softened 3 cups sugar 6 eggs 1 tablespoon vanilla extract 2 ÃÂ¼ cups all-purpose flour ÃÂ½ cup baking cocoa 1 teaspoon baking powder ÃÂ½ teaspoon salt 1 cup (6 ounces) semisweet chocolate chips 1 cup (6 ounces) vanilla or white chips (I usually don't use any white chocolate chips - I just add more of the semi-sweet chips or use milk chocolate chips if I have them) 1 cup chopped walnuts (I don't add these since we are nut-free but they would be great) In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine flour, cocoa, baking powder and salt; stir into creamed mixture just until blended (do not overmix). Pour into two greased 9-in. square baking pans. Sprinkle with chocolate and vanilla chips and nuts. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool. Yield 3-4 dozen.

I actually have time to type a couple recipes out today! whoo whooo Salted Nut Roll Bars 1/2 cup marg 12 oz bag peanut butter chips 1 can sweetened condensed milk dry roasted,salted peanuts 2 cups miniature marshamallows Butter 9x13 pan. Put a layer of peanuts in, but don't cover the bottom of pan completely. Set aside.Melt margarine,chips and milk over low heat or in microwace. Stir in marshamallows, don't melt. Spread mixture over nut layer and top with another layer of peanuts. Cool and cut. This recipe came from my sister years ago and I swear are the best brownies I've ever ate. Brownies 2 cups sugar 1/2 cup cocoa 1 cup butter,melted 1 1/2 cups flour 4 eggs 2 tsp vanilla 3/4 tsp salt Grease a 9x13 or 10x15 pan (I use 10x15)Bake 25 minutes at 350 degrees. Cool. Frosting 1 cup sugar 1/4 cup milk 1/4 cup butter Boil, add 1/2 cup chocolate chips(milk choc is great!)Beat and add 2tsp vanilla. Cool and spread on brownies.

And this one is very quick and easy. FORT WORTH PEANUT BUTTER FUDGE 2 sticks butter (real butter) 2 cups chocolate chips 1 16-oz jar crunchy or extra crunchy peanut butter (I use JIF) 1 lb. box powdered sugar Put butter and chocolate chips in a large glass bowl and place in microwave. Microwave on high for 1 minute; then stir mixture well. If chips are not totally melted return to microwave and run on high for another 30 seconds. Remove and stir well. Put the peanut butter in the chocolate mix and stir well. Add box of powdered sugar and mix thoroughly. It gets tougher to stir once you have added powdered sugar so need some muscle. When thoroughly mixed, spray a 9 x 13 pan with Pam (or equivalent) or you can butter the pan well. Put fudge in the pan and spread out evenly. Place in refrigerator overnight. When ready to cut fudge into squares, remove from refrigerator for 30 minutes or so before cutting. This is so easy and so very good. It is quick and easy for the busy holidays.

This is my favourite fudge recipe. Not as easy as the type made with marshmallow cream. This one is the old fashion kind that needs to be cooked and then beaten. Worth the effort though. Creamy and Smooth. Home Cookin Chapter: Recipes From Thibeault's Table ================= 1 cup white sugar 1 cup brown sugar 1 cup cream 1/3 cup of butter 1/4 cup of maple syrup pinch of salt vanilla . Add the two sugars, butter and cream maple syrup and salt into a sauce pan. Place over medium heat. Stir while bringing to a boil. Lower the heat and continue to stir slowly while the mixture cooks. After about 7 minutes, test by pouring a small amount into some cold water. You want it to form a soft ball. You might need to cook it for another minute or two. Remove from the heat, add a couple of teaspoons of vanilla and start stirring. It takes about 14 or 15 minutes for the fudge to cool and thicken. Pour into buttered dish. Option: Replace the cream and cup of white sugar with one can of Sweetened Condensed Milk and increase the maple syrup to 1 cup. To make Caramels instead of fudge, 1 1/2 cups brown sugar 1/2 cup white 1/2 cup white corn syrup 1 cup butter 1 cup cream pinch of salt vanilla Cook to almost hard ball stage. Let cool slightly, stir and then pour into butter pan or mini muffin tins.

I did a cut and paste from the Texas Sheet Cake recipe for just the frosting part. Very fudgey.

For the Frosting
- ▢
  6 Tablespoons milk
- ▢
  3 Tablespoons unsweetened cocoa powder
- ▢
  1/2 cup butter (1 stick)
- ▢
  3 3/4 cups powdered sugar
HOW TO MAKE SHEET CAKE FROSTING:
- In a saucepan: Add milk, cocoa and butter; bring mixture to a boil.
- Stir in: powdered sugar off the heat. I like to beat the mixture with my hand-held mixer to get rid of any lumps.
- Pour over cake. Pour the hot mixture right over the hot cake. Use a spatula to spread it evenly over the cake. Allow frosting to set for about 10 minutes before eating.

Milk is fine - it's what's called for anyway. You might try a bit extra of it as well, but add only a tiny amount at a time...

I guess I should mention that if you aren't making Texas Sheet Cake, do not pour the hot icing over the hot cake or you will have a very dense cake...:-0
