Planning a casserole. Wanna help?

I have a lovely half a turkey breast to turn into Sunday dinner. Well, at least a couple dinners. :) The vote landed on casserole. Yellow potato slices in the bottom. Turkey slices. And.... I have some little turnips, a celery root, a small fennel, carrots, parsnips, onions, shallots, garlic, ginger, bell peppers, scallions, celery, pumpkin, kale, chard, parsley, dill, oregano, thyme, tarragon, sage, rosemary, mint, basil. All kinds of citrus, apples, pears, grapes, watermelon, persimmon, pomegranate. Plenty of spices.

I was thinking cheddar. I have a very good orange cheddar. Lots of other cheeses as alternatives. And a custard binder. I can't decide what flavor to make the casserole. I don't want to do Southwest, but am otherwise open. Perhaps a cheese biscuit topping.

What would you do?

So I didn't have a full fledged plan and ran out of time. I just winged it without all the feathers. It turned into a strata kind of dish. The pesto inspiration was rainbow chard and curly parsley, toasted almonds, olive oil, sherry, S&P, garlic pepper, and pecorino romano. I just added stuff until it tasted more than green. Smeared thick on the bottom and lightly roasted with a layer of shingled yellow finn potatoes, oiled and generously sprinkled with sumac. On that, a thin layer of grated good cheddar, a layer of chipped turkey, covered with mustard powder and more cheddar. On that, tiled lightly roasted baby turnip slices, more turkey and cheese, a tiled layer of celeriac, and somewhere in there some fenugreek, more cheese and turkey, binder of three eggs, a couple Heaping spoons of previously whipped cream, and more than a cup of gravy, all topped with another schmear of the green then shingled potato slices and more cheddar. No biscuit. :). Looks good. I'll let you know how it goes over. :)

plllog, one thought is maybe a tweak of Ina's Chicken Stew With Biscuits. Easy to use the turkey and potatoes and whatever veggies fit for you. The biscuit topping is good but Cheddar biscuits would be another option.

My mom always did a broccoli turkey divan after the holiday. She did it with pasta or just broccoli... but I think it would be nice with the potato, fennel, and parsnips. A bit of chard stem might be a nice addition too.

She was also heavy with using mayo in it, with a can of condensed soup and lots of cheese... but I like a more traditional mornay sauce, and yes, cheddar would be mmmmmm.

If you got enough garlic, roast up a head or two and make some roasted garlic biscuits to go along with it.

Make a greens and herbs "pesto" to heavily smear your pan with... layer in your taters, turkey... roast up some bell peppers and maybe some apple to layer on top of the turkey. More pesto mixed with cheese on top. Make it creamy and think of a casserole solid turkey zuppa toscana kind of thing. Cheddar wouldn't work in this version.

A turkey and pumpkin curry with roasted veggies... a mint and rosemary sauce to drizzle with.

I'd do this... Make the recipe as you've noted including the ham; but do not add the broccoli. When it's done, pour into a casserole dish & top with the cheese. Cover & refrigerate until needed (it could also be frozen at this point). Then, to serve...cook from frozen in a 350 degree oven for 1 hour. Remove the cover the last 15-20 minutes to brown the now melted cheese. For the broccoli, I'd do this... Use broccoline. While the casserole is reheating, place the broccoline on a baking tray, dribble a bit of olive oil over the broccoline, salt & pepper. Put in the oven next to the casserole for the last 30 minutes. (I normally roast veggies at 450 degrees & broccoline doesn't take 30 minutes but I think it 'might' at 350 degrees (the temp the casserole is cooking). You could freeze several of these casseroles & have an easy meal ready quickly. Cook once, clean-up once, eat several times. /tricia

Nothing like pictures to make possibilities come alive! Armom, if they don't somehow :) get seduced into more change, just rehanging the pantry door to hinge on the same side but swing inward against the wall would be a quick little improvement that would pay off in convenience. For a one-cook kitchen, that's actually a very nice tidy space to work with. And, you know, that kitchen hall wall doesn't look like a bearing wall to me. The bedroom hall wall and probably the one by the DR do. How about if on one of Rhome's drawings the door into the kitchen were to shift to the bottom left corner, still facing the dining area, but with a little short open counter reaching across from the right for serving, socializing, and views? The entry would also be that much more convenient to...everything.

I'd already planned to do this, then this morning I got a text from Krystal asking me to post on FB, but there's a lot of people here at the KT that may not be members of Curt's Group on Facebook. Krystal says Curt is doing good and should be going to rehab today or tomorrow. I love the table and the 18" blue lamp. I don't think you need a red pop of color what I I would do is pull the two chairs (same scale for both like the slipper chair) in front of the table. The table is too tall to be beside the slipper chair but slightly behind and the table would work. Kind of like a sofa table is usually higher than an end table. i would think that as is, if you sit in the chair the table is at an odd height, pushing it back and having similar sized chairs should make the table work

Re Ina’s Chicken Stew and Biscuits....make Ina’s biscuits!! I made her recipe for years using frozen biscuits as the topping. Then one day, I found myself out of biscuits and made Ina’s. OMG...and I really mean that. They were THE BEST, lightest, fluffiest, most flavorful biscuits I’ve ever had (I’m southern. I’ve eaten LOTS of biscuits...and have the figure to prove it!). Besides commenting on biscuits, I have nothing to add. To me, leftover turkey = Turkey Tetrazzini. [yawn]

cheddar doesn't always melt well ... but it might for you since you are closer to sea level.

provolone might be nice ... or pepper jack

Mmm - yes turkey divan is very good. I've often made it when I had broccoli on hand.

I'm making a pot pie - pate brisee crust, cut up roast turkey, pre-coooked veggies, fresh herbs and leftover gravy. I might add some chopped fresh cranberries too.

No broccoli. No breadcrumbs. No Divan. I apprecite the old-schoolness of it.

I'm looking for something different than pot pie flavor or and dumplings flavor, or Southwest, because that's our favorite chicken and dumplings that isn't classic.

Beesneeds, I love the idea of the “pesto” smear. Basil, garlic, olive oil, maybe almonds to stand in for pine nuts, parm. Or maybe chard and parsley, which need using (the basil is still in the garden). I usually bake the potato layer first, so that would serve well underneath. I love the idea of garlic biscuit, but not for my mother. I might have enough smoked mozzarella to go with.

Dave, I don't have an altimeter, but I'm sure I must be more than 100 feet above sea level. I've never heard that about cheddar. It melts fine for me. You have to grate it for good results, and it can break if you aren't careful, but it melts. Melting it in a custard always works.

Hmmm. If I go further from pesto... I'll have to see if I have a rind which will go with the cheddar. I like turkey and cheddar. POP! New idea... I think it might be great with sumac. I wonder if pomegranate seeds will soften in the casserole or be unpleasant? Sumac, pepper, garlic, cheddar... It's starting to sound like an idea...

I ended up mixing a bag each of corn and carrots, added a handful of green beans, added some leftover cubed turkey, and added some Alfredo sauce and a generous sprinkle of panko crumbs and some finely grated gruyere cheese and ovened it at 350 for 30 minutes .... hit the post thanksgiving leftover spot ...

Sounds good, Dave. I don't have those ingredients, but I admire the toss-‘em-togetherness.

My casserole was a big hit. Mission accomplished, all the flavors combined well and made a tasty whole. The cheese between layers disappeared into the whole. The only real flaw, however, was that I should have used another couple of eggs to tighten it up more. I was perplexed about a side until I espied some baby spinach. Just a pile of little leaves with a dollop of the pesto-ish green stuff. Delicious and made the plates look happy.
