Planning a casserole. Wanna help?

I have a lovely half a turkey breast to turn into Sunday dinner. Well, at least a couple dinners. :) The vote landed on casserole. Yellow potato slices in the bottom. Turkey slices. And.... I have some little turnips, a celery root, a small fennel, carrots, parsnips, onions, shallots, garlic, ginger, bell peppers, scallions, celery, pumpkin, kale, chard, parsley, dill, oregano, thyme, tarragon, sage, rosemary, mint, basil. All kinds of citrus, apples, pears, grapes, watermelon, persimmon, pomegranate. Plenty of spices.


I was thinking cheddar. I have a very good orange cheddar. Lots of other cheeses as alternatives. And a custard binder. I can't decide what flavor to make the casserole. I don't want to do Southwest, but am otherwise open. Perhaps a cheese biscuit topping.
