How do you like your banana bread?

I've noticed people here have been making banana bread. How do you like yours?


Yesterday, I made perfect banana bread, which I reported in Fun with Flour #2. Today, I realize how really perfectly perfect it really is. For me, most banana bread is too sweet, and I don't like spices in it. But my regular overripe banana eater isn't around, and it was time to bake a sweet. I started with a basic banana bread recipe posted by Wizardnm a long time ago. Then I tweaked it to suit myself. The big issue is not eating it all!


3 Bears Banana Bread -- It's just right!

AKA Blueberry Pistachio Banana Bread, adapted from Wizardnm's Banana Bread


Ingredients
240 g unbleached AP flour, sifted
3/4 C sugar
3/4 tsp baking soda
1/2 tsp salt

1/2 C lightly chopped pistachios

3/4 cup blueberries rolled in some of the dry mix



3 ripe bananas, mashed well

1/4 C buttermilk (or plain yogurt)
2 large eggs, slightly beaten
6 TBSP butter, melted and cooled
1 tsp vanilla

Directions
Preheat oven to 350°. Grease and flour bread pan.

Whisk dry ingredients together in a large bowl, stir in pistachios.

In a medium bowl mix together bananas, buttermilk or yogurt, eggs, butter and vanilla.

Add wet ingredients to the dry, mixing gently with a spatula, just to combine, batter should look lumpy. Stir in blueberries. You don't want to over mix. Scrape batter into prepared loaf pan.

Bake about 60 minutes, until loaf is golden and a toothpick comes out almost clean. It can have a crumb or two, but you don't want wet showing on the toothpick.

Cool about 5 min., then turn out of pan to finish cooling on a wire rack.

Makes 1- 9" loaf.
