How do you keep your bread?

Being just one person, I do not eat a lot of bread. I haven't bought commercial bread from a store in over a year. I don't love it, and don't want the carbs. However, it is nice to have on hand in case I'm in the mood. That means that when I do make bread, it doesn't have any preservatives in it. I usually put it in a ziploc bag and just throw it on the counter or on top of the microwave. I don't pre-slice, I slice as needed. I know that freezing or refrigerating would make it last longer. However, would that also dry it out? I thought about actually USING my vacuum sealer for once (heaven forbid), but it would crush the loaf. What's the best way to keep it?

ALSO, I need a good recipe to make bread specifically for bread crumbs. I should probably start another thread devoted to that, but I'll see if I get any responses here. I would like to season it during the bread making process instead of after I've put the chunks in the food processor. I used to use Vigo or some other commercial bread crumbs. I am sick of running out and not having them, and I feel silly making my own bread but buying crumbs. I'd like something that tastes similar to commercial bread crumbs. Something good for chicken or crab cakes. Thanks!
