Comments (6)And a belated Happy St. Patrick's Day to you! I had the corned beef, cabbage, potatoes, carrots as well, but not not as artistic a presentation as yours. Fixed mine in the electric pressure cooker, placed part of the beef on a plate, cut off my portion in thinner slices then just spooned out the veggies onto a plate with the meat. There is just me so I keep it simple. The beef was so tender and juicy. Silly me, I forgot to mention that when mum fell, it was the day before gram died, so it's been a rough past month, but mum's doing a lot better (still sore in her, um, pride lol), but she's doing okay. Went back to the farm today, but no leftovers for supper since there wasn't enough. My friend said his mother usually makes Reuben sandwiches with the leftover corned beef and cabbage. I hope everyone had a delicious meal and a happy, happy day with your friends and families. Mum and I had lunch from the Dairy Queen and I had a grilled cheese for dinner at my friend's (his parents just live up the road). I was hungry a little while ago, so I had Wendy's leftovers (with some fries from lunch) while mum and I watched the season premiere of Trading Spaces. Comments (22)I'm a minimalist wannabe, so I have very few holiday decorations. One rubbermaid bin of stuff for xmas, and two tiny things for halloween (plus we buy a couple of pumpkins). That's it. I could not imagine the storage it would take to decorate for every holiday. St Patrick's day seems really over the top. I know.... no fun at all.
