Advice on canning mistake, please

I made a double batch of Annie’s Salsa last week. Yesterday I was reading through the notes I had made, and I realized I had added an EXTRA 1/2 cup jalapeños! I don’t know how I misread the instructions, but I did. I should have had a total of 3.5 cups of peppers or less, and I had added a total of 4 cups.

I trust my notes are correct.


I didn’t add any tomato paste, and used just one 16oz can of tomato sauce.

I reduced the amount of onion from 5 cups to 2 cups, thinking 5 cups would be way more onion than we like, and was happy with the taste.

For acid I used 1/2 cup ACV, 3/4 cup lemon juice and 3/4 cup lime juice to get the 2 cup total.


So I added 1/2 cup too much pepper and 3 cups fewer onion....

I thought the reduction in onion probably saved this batch from being tossed.

Could I please get some input from you experienced canners?
