Comments (35)First we start off with antipasto, and stuffed mushrooms. Then the pasta dish, it will be homemade ravioli, courtesy of my Italian MIL. Then the salad, arugula sald topped with baked stuffed gorgonzola pears. Then the main dish, grilled lamb chops with grilled veggies, and a roast leg of lamb roasted with rosemary potatoes. All served with a lovely homemade red wine. I love my in laws, but I love them more after a few glasses of red :P DH and I are hosting this year to take the burden off my MIL who hosts everything. There will be 11 adults and 6 children, and 1 infant who is still just bottle feeding, no lamb for her! For desert mini coconut cupcakes and traditional grain pie and italian cheesecake. Comments (12)Moonie, the cook/chef at my mothers retirement apartment facility is pretty amazing too. I've been there when beef wellington has been one of the two nightly dinner entrees and its been prepared as well as any I've ever had. I don't know yet what we're having for Easter though, we're thinking of meeting someplace my sister can join us too (165 miles in between her and Mom) after everyone has been to their respective church service so that will mean restaurant close to the interstate corridor. Which will be OK, we haven't all been together since Christmas Day. I have a BIG ham here I need to cook sometime in the next few weeks (Christmas gift), will probably make it buffet, find a night that works for several and have a crowd here then - hoping not too many tired of ham right after Easter....See MoreEaster Plans
Comments (59)The ham is in the crock pot, the squash casserole is in the other crock pot. I have sweet potatoes and baked beans yet to make which are easy peasy. I baked the biscuits yesterday. Then just some appetizers...fresh veggies, dip, cheese, crackers, nuts. I did get the carrot cake from costco (only 2 left!) and I bought some madeleines which I love. The rest, the family can fill in as they wish. My gift to myself is to not make myself crazy over these get togethers as I usually do. Comments (36)I think this will be the first Easter we haven't spent with our kids ever. I love when we all go to Mass together on Easter morning. Our son is 38 today. Our daughter turned 33 last Friday. Our precious angel granddaughter will be 1 on April 25. I don't think we will be together for any of it. It makes me so sad to be apart from them but it's what we have to do right now. I am very grateful for skype and video calls. We skyped this morning with our son and our daughter and grandbaby. Chase blows kisses, says dada and mama and has a heart melting laugh and smile. I'll be watching mass on tv Easter morning and will thank God for the many blessings in my life.
