Salut Salmon Inspired by a dish served at Salut Caf� Americain in St. Paul MN Zucchini, sliced Yellow Squash, sliced Grape Tomatoes, halved Fresh Spinach, rough chopped Salmon Filet Dill Butter Sprinkle salmon with salt and pepper and sear in hot frying pan in a small amount of olive oil. Drizzle another saut� pan with about 1 tsp olive oil and 1 tsp dill butter, when hot, lightly saut� the vegetables. Remove to serving plate and top with salmon filet. Top hot salmon with a dollop of dill butter and serve. Dill Butter: Mix fresh or dried dill weed with soft butter and a pinch of salt. Serve at room temperature. For dessert... Meyer Lemon Pudding Cakes 1/3 cup sugar 1/4 cup sugar, plus additional for ramekins 1/4 cup all\-purpose flour 1/4 teaspoon salt 2\-3 Meyer or regular lemons 3 large eggs, separated 2 tablespoon butter or margarine, melted and cooled 1 cup whole milk 1 pint raspberries, for garnish Fresh mint sprigs, for garnish Preheat oven to 350 degrees F. Grease eight 4\- to 5\-ounce ramekins; sprinkle with sugar to coat bottoms and sides. Shake out any excess. In small bowl, whisk flour, 1/3 cup sugar, and salt. grate 1 1/2 tablespoons peel and squeeze 1/2 cup juice. In large bowl, with wire whisk, beat egg yolks and lemon peel and juice. Whisk in butter and milk. Gradually whisk in flour mixture. In another large bowl, with mixer on medium speed, beat egg whites until foamy. Gradually beat in remaining 1/4 cup sugar until soft peaks form when beaters are lifted, about 2 to 3 minutes. Add one\-third beaten whites to yolk mixture and, with rubber spatula, stir gently until incorporated. Gently fold in remaining whites until just incorporated. With ladle, divide batter evenly among prepared ramekins. Arrange ramekins 1 inch apart in large (17\-inch by 13\-inch) roasting pan. Fill pan with enough hot water to come halfway up sides of ramekins. Carefully transfer pan to oven and bake 30 to 35 minutes or until cakes are golden brown and tops rise 1/2 inch above rims. Cool cakes in pan on wire rack 5 minutes. With sturdy metal spatula, carefully remove ramekins from pan with water and transfer to wire rack to cool 15 minutes longer. Run thin knife around edge of 1 ramekin. Place small serving plate on top of ramekin and invert plate and ramekin together; remove ramekin. Repeat with remaining ramekins. Comments (15)Update: Dad said he wanted matzoh ball soup. He has new neighbor friends he's invited to dinner, and he's been talking up the soup so he wants me to make it. I think that means I am going with chicken for the protein. I'm torn on what to make. My Moroccan chicken recipes are one with apricots which is only slightly orangeish due to being colored with paprika, and the other one is with saffron and peas and golden raisins and is yellowish. I could add some red pepper and cabbage to either recipe. But neither one calls for tomato. I am getting that mixed up with Mediterranean style chicken. Mom has a great recipe for chicken cacciatore which is flavored with mushrooms and rosemary, but my husband turned up his nose at the idea of mixing Italian style chicken with latkes. I don't know, I'm wondering the same thing. Using one of mom's recipes has some sentimental appeal though. I also have some home made plum sauce that I could use, it needs to get used up and is pretty basically sweet and sour but kind of purplish brown, not particularly pretty but again, I could add red peppers and cabbage. I will definitely make a beet salad. I have two recipes for a salad similar to the one you describe Agmass. Both are in the Moosewood Restaurant Daily Special Cookbook. I've made both. One is called Lobio and calls for red kidney beans instead of beets! The other is called "Syrian Beet Salad" and is a basic marinade. I was not too crazy about the taste and texture combination of red kidney beans and walnuts when I made the Lobio recipe, although it looks good! Has to be carrot cake for dessert. Comments (62)That looks good! He probably should have given his product packaging. Some commenters had trouble with a very wet mix. I'm guessing those looking for exact recipes are not necessarily intuitive cooks. And lots of steps involved. But the trifecta is a win-win. This fella seems really good at what he does and seems healthy, HERE ,He does all the replacements that is a bit of a yawn for me. But I always learn something and he does use lots of spices instead of the usual salt lick soy sauce soaks in the packaged stuff. We don't have any close friends vegan or vegetarian, just some family members, so I'm not much help. Great vegan restaurants here but I order soup and salads and veggie 2 bite balls to share. Can't commit to a big burger. Most of our larger gatherings with secondary friends, or a friend will bring a guest, I make so many vegan choices in salads I don't play with the meat replacements. So this is an environmental issue and not a 'lets make some vegan kids' ? . The vegan kids at work just out of college are so unhealthy eating the packaged junk not having much cooking experience. Is she set and limited to the one supplier? Maybe a few products grown somewhat locally, PNWest...a good educational lesson?. I buy from Palouse,WA. Garbanzos and red winter wheat once a year. 5 pounds of each. Good slicers, dicer, shredders, juicer, blender? No way can they use mandolines like high end trained restaurant staff. And slow. Variations of zucchini and pasta abound— it was one of the internet favorites this summer. Apparently Julia Child developed something like this but I imagine the current iteration is something she would not recognize.
