Canned crab meat from supermarkets or Trader Joe's is getting to be very good. Almost like fresh crab meat. Expensive, but a can goes a long way for many meals.

And a roasted chicken from supermarket.

Fresh greens and famous Jersey tomatoes.

You will have quick chicken salad and crab meat salad for lunch. Maybe dinner too.

Fritatta....out of eggs, cheese and whatever veggies you can find....tomato, vidalia onions a sweet red pepper and a little bit of broccoli. A small green salad and some bread sticks...or a baguette.
Or a spincah salad....with egg, bacon mushrooms and sub vidalia onion for the red onion....and don't forget crumbled bacon on top.
Egg salad sandwiches on white bread with the crust cut off and some fruit.
Bagels, cream cheese, fresh tomato and onion....with fruit for dessert.

You would love Tomato Salad!

For two:

Cut one big tomato and two or three Romas into bite size chunks.

Slice one jalapeno into very thin rings

Slice one red onion into thin rings (For presentation purposes, I use only the tiny inside rings)

Mince one or two garlic cloves

Place everything in a large bowl, sprinkle with a good amount of salt, add crushed dried oregano, EVOO, and a light sprinkle of red wine vinegar over all, toss together and serve at room temperature with a crusty loaf of French or Italian bread (ripped, not sliced) to sop up all the wonderful juices. Heaven!

The fact that you can get fresh veggies at your farmers market made me think of this. It's excellent and impressive!

Salut Salmon
Inspired by a dish served at Salut Caf� Americain in St. Paul MN

Zucchini, sliced
Yellow Squash, sliced
Grape Tomatoes, halved
Fresh Spinach, rough chopped

Salmon Filet

Dill Butter

Sprinkle salmon with salt and pepper and sear in hot frying pan in a small amount of olive oil.

Drizzle another saut� pan with about 1 tsp olive oil and 1 tsp dill butter, when hot, lightly saut� the vegetables. Remove to serving plate and top with salmon filet. Top hot salmon with a dollop of dill butter and serve.

Dill Butter: Mix fresh or dried dill weed with soft butter and a pinch of salt. Serve at room temperature.

I roast chickens when they are on sale, chunk up and place on cookie sheet to freeze. When frozen, put in zip lock bag. That way you can make a curried chicken salad at the last minute or chicken salad with dried cranberries, Egg salad sandwiches on fresh pumpernickel bread is delicious....and one of my favorites:

Foo Young Toss

1 head Romaine in bite size pieces
1 lb. fresh bean sprouts
1 5 oz can water chestnuts
5 slices bacon
3 hard boiled eggs, sliced
1 Can chow mein noodles

Dressing:

1 C oil
1/2 C sugar
2 T grated onion
1/4 C vinegar
1 tsp worcestershire sauce
1 tsp soy sauce

You can make the dressing days ahead of time and prepare the salad except for the chow mein noodles the night before. Add noodles and dress salad just before serving

Get some cooked chicken and spread it out in shreds or chunks on a dish. Make a sauce with mayo, tuna, capers, lemon juice and salt and pepper and spread on top. Serve chilled.

Boy this has been a real eye opener. I'm mostly vegetarian so my mind usually draws a blank when it comes to meat. I never even THOUGHT of buying a precooked chicken. Live and learn! Thanks for the ideas. Linda, those little cakes have been on my "to try" list for about four years! And I'm still a molten lava cake virgin. Oh how I wish I didn't have to watch what I eat like a hawk. Now that I have a sit at a desk job with a long commute, I'm gaining weight like crazy! And I was already struggling to keep my weight down. I don't hardly ever do sweets and I still keep gaining. I know I have to exercise but with the long work hours it is hard to squeeze it in. That 20 min. walk I take at work over the lunch hour isn't cutting it!

I ended up thawing out some mediterannean style turkey burgers I had in the freezer (easy peasy to make a bunch up with crumbled feta, dried onions, frozen spinach and Penzeys Turkish seasoning) and serving that along with deli pasta salad. Iced tea punch that I already had on hand to drink and fresh strawberries dipped in greek yogurt for dessert.
