I think you need a big salad or a smallish salad bar where everyone can make their own. A big bowl of romaine and green/red leaf lettuce plus containers of sliced cucumber, rings of red onion, julienne carrots, grated cheese, diced hard boiled egg, other veggies - two salad dressings, one vinaigrette and the other Ranch or whatever the young folks like these days.

If not a salad, than a platter of fresh veggies and a dip.

Sangria in a clear pitcher with cut up fruit. It always makes an impressive presentation. If this is a non-alcoholic do, or even as a supplement, mint lemonade, which is regular lemonade with cut up lemon (or orange) and mint sprigs.

Only,I like a Chefs salad made with crispy Iceberg Lettuce
and all the good stuff thrown in,

Sharp Provolone, Ham and Cooked Salami pieces, Feta,
Pepperoni, Olives, Onion, Artichoke Hearts,

Tomatoes, Anchovies and anything else yoiu may like.

Sprinkled with, Olive Oil, a little Balsamic and all the good spices, along with some Parmesan Cheese.

Think I will make some now and put it into a Hoagie.
