Comments (30)I found a Rachael Ray recipe for crab cakes. Rachael does not like mayo so I was confident it would be ommited and I was correct! I like that she uses red wine vinegar though . (in addition to her text book EVOO) Someone above did not like the fact I recommended avocados as a subsitute and that I happened to write a blog article about that. Oh well, can't seem to please everyone. But this recipe is directly from Rachael's Ray site and it sounds really tasty. (and looks to be mayo free!) Ingredients 1 starchy potato, peeled and thinly sliced 2 cloves garlic Coarse salt Handful fresh flat leaf parsley Couple sprigs fresh thyme, leaves finely chopped 1/2 lemon, zested and juiced 1/2 teaspoon crushed red pepper flakes 2 tubs fresh lump crabmeat (6 ounces) , available at fresh seafood counter 7 tablespoons extra virgin olive oil (EVOO), divided 2 roasted red peppers 1 small shallot, chopped 2 teaspoons sugar 2 tablespoons red wine vinegar Black pepper 1 small head escarole, chopped 1 small head radicchio, chopped 1 endive, chopped Preparation Cook potatoes in boiling water 6-7 minutes until tender, drain, scatter across a large flat surface to cool and dry, 5 minutes. Smash the garlic with salt to make a paste and add to potatoes along with thyme, parsley, lemon zest and crushed red pepper flakes. Feel through the crab as you add it to the potatoes to check for shells. Mix together to combine and form into 4 (4-5-inch) super sized, killer crab cakes. Heat 3 tablespoons EVOO in a non stick skillet over medium to medium- high heat. Add the cakes and cook 5 minutes on each side or until deep golden brown. Combine the roasted red peppers, shallot, sugar, the juice of 1/2 lemon and the red wine vinegar in a food processor. Stream in the remaining 1/4 cup EVOO and form a dressing. Wait 5 minutes and check for itching, redness or blisters. Nothing there proceed to the next step. Another drop on another location of the fore arm, but this time take a needle and slightly scratch the surface of your skin. You don't want to bleed, but you want to get under the epidermis. Wait 5 minutes and check again. No symptoms at all do a small taste test by cooking the egg and take only a small bite and wait for at least 30 minutes. You can take an antihistamine prior if you worry, because it may reduce the symptoms, yet it may prevent any symptoms. If you don't get the symptoms you get from chicken eggs then most likely you are fine. Take the duck egg to your allergy specialist, if you are not comfortable testing yourself in the house. They can do the skin test under supervision and they do have medications on hand if you react badly. In general you should be fine doing the skin test, if you proceed as I have described above. Comments (14)Coincidentally, I've been thinking about cake mixes...on another thread I wrote about making cupcakes for my grandson's birthday. I was just going to buy plain cupcakes and embellish them, because I want some vanilla, chocolate and need some # of gluten free. So I am really not up to making 3 batches of cupcakes (mostly because I hate the clean up in between batches). But then I realized I'd have to get unfrosted premade cupcakes from the bakery and I thought, sheesh, how lazy is that, buying cupcakes then frosting and decorating on my own. I can just whip out the plain cupcakes. A MIX, I'll use a MIX. Then I started searching on this forum for people's favorites and found this thread. And there are some references on the internet to TJ's having cake mixes, but I can't find out if they still do. Does anyone know? Comments (22)Avocado oil has a pretty long shelf life once opened. Not like a nut oil at all. I only use avocado and good EV olive. Good butter in the freezer. I keep it simple. Oh, and a small toasted sesame oil in the fridge but so strong not much is needed. Simple cold pressed oils. Safflower oil is heavily processed unless 365 but it looses the high heat properties when expeller or cold pressed. Mayo is 3 minutes or less with a stick blender. Piggy back the 3 minute chore by adding lemon, vinegar, ginger, herbs, blue cheese or buttermilk, and make a dressing in the same mayo container without washing it. Mayo for a week and dressings for the week. Half the price than any commercial brands. Not getting much from an olive oil added commercial mayo. They still use other heavily processed GMO oils. They are just jumping onto the 'heart healthy' train. A lot of BS in that. I would just enjoy your favorite BluePlate or Hellman's original and just try and cut back. Use more spice and mustards and horseradish that have zero calories, zero fats. Resist all the gifty nut oils that clog the fridge...just use fresh toasted nuts in salads. My homemade mayo is not runny at all. I do love my Hellman's. First summer BLT is not the same without it. Or my holiday crab cakes. A rare treat.
