Comments (81)foodonastump, I didnt mean it to sound like they are being dishonest, or trying to gouge the consumer.Its just a matter of running a business. I stated:" Prices of groceries as with everything else but jobs and wages are going up. These companies are going to raise their prices one way or the other." Gasoline to truck these groceries, and all the other expenses that go along with getting things to the shelves have gone up dramatically. If they didnt raise prices, then that would seriously chip away at any profits they are making.And we know EVERY business is in it for a profit or they wouldnt be in business.(Exceptions are non profits.) I do believe they hope the customer isnt going to notice the increase by making things smaller, or otherwise they would just increase the price and be done with it. If it's not - instead of making carrot cupcakes out of it - make Paula Deen's Gooey Carrot Cake and use the spice cake mix for the base instead of a carrot cake mix: GOOEY CARROT CAKE 1 pkg. carrot cake mix 4 eggs, divided 1 stick (1/2 cup) butter, softened 8 oz. cream cheese, softened 1 lb. box 10X confectioners sugar 1 cup finely grated carrots 1 cup pecans, chopped 1 tsp. vanilla extract Mix cake mix, 2 eggs, and butter. Pour into a greased 13- x 9- x 2-inch baking pan. Mix cream cheese, confectioners sugar, 2 eggs, grated carrots, nuts, and vanilla with mixer and spread over batter in pan. Comments (13)I grew up on box cakes and used them with my own growing family. The few times I have had "scratch" cakes I found them noticeably drier. BAck in the day my MIL made DH his FAVORITE German Chocolate cake for his birthday each year. I tried it ONCE. Never new what all the talk was about--more work--need special flour and chances of a FLOP were greater. The boxed version was MUCH MUCH moister. Now we don't eat sweets much but for Easter I always make a carrot cake. From scratch, no box but it has so much extra stuff in it, coconut, raisins, carrots it turns out moist and delish every time!! Your texture experience with a box cake may be in your technique. If you read the label they have changed DRAMATICALLY how they recommend you stir/mix them. Gone are the days when I would really beat the heck out of the batter making it thicker and lusher.
