Hmmmm.....I'm planning something similar: apricot roasted chicken breasts, rice and acorn squash. And probably cherry tomatoes, as I have an excess supply ;-)

I volunteered at our clubhouse today for a new residents social and snacked while there. They had shrimp, cheese and crackers of all kinds, fruit platters and veggie platters along with cookies and brownies. Dinner is at my daughter's home tonight and I think it is steak on the grill. Yum

After record-setting temperatures (31°C) in late September, we're now at normal temperatures, in the teens. I have a ham in the oven with scalloped potatoes. A true fall meal. Sauteed broccoli will be the veggie. Hubby has the urge for a pie, but I'm not making one now. I will next weekend, for our Thanksgiving.

Someone asked for a recipe for chicken spaghetti. I posted a link to Ree Drummond's recipe and decided to make that. It's in the oven now

I had some shredded hash browns, along with a fried egg. Had a side bowl of vegetable soup that I made today. I haven't been eating enough vegetables lately.

Went to see a show at our little playhouse this afternoon. This time we included the hubbies. Went for Chinese afterwards. There were eight of us and we each ordered something different, took what we wanted and then put our plate on the lazy Susan to share. Lots of variety. I'm stuffed.

Made a pot of chili, will be eating that for the next several days or more. Turned out pretty good.

New England boiled dinner.

Take out. Eggplant parm. Local osteria.

I fixed a big stir fry of cabbage, sweet onions, mushrooms and garlic kielbasa sausage. Very good.

Cuban black bean soup, steak, grilled plantains, rice pilaf, steamed tomatoes, and mojitos.

Life is good.

Homemade chilimac. It was cool and rainy yesterday and I had a craving.

Had to be something easy so I scrubbed some potatoes this morning and put them in the crock pot for baked potatoes, had a big very thick ham slice in the freezer that I put in the frig yesterday to thaw I grilled it a few minutes on each side on the gas grill after I brushed it in butter and brown sugar. .had peas and fresh peaches with it. I only ate a peach. I running out of fast dinner stuff and don't feel like shopping..tomorrow I suppose I'll have chili from the freezer and try to muster the energy to whip up some corn bread.

We had cheeseburgers and a jar of spicy corn relish. Not much work or imagination.

Okay -- cooking for one. I just put all this in one skillet:

1 sautee onions, a little red pepper, some steamed cubed butternut squash, some soaked white beans, salt and when all was kind of done, threw some raw baby kale & sliced grape tomatoes on top and put the lid on.

Meanwhile -- 3 eggs with a teeny bit of milk, turmeric powder & pepper, mixed up and on low fire a la scrambled. When it was cooked I put it on top of the skillet stuff and then put it all in a bowl and ate alone.

It was just everything I had in the refrigerator. I wish I could practice on some company dish -- a real dish. I found this very good but would I serve it to anybody? I feel very challenged about cooking for friends and I have done it often.

Robert came home from the store with ingredients for shrimp and grits, my version. He did all of the prep work, so it was an easy and tasty meal.

There are some very delicious sounding meals in this thread! Bleus2, your invention sound great! I often make a meal including leftover rice and veggies, break a couple of eggs on top, then cover until the whites are cooked.

Leftover spicy pulled pork. I made it earlier in the week and had pulled pork sandwiches with jalapeno coleslaw, pork tacos, over a baked potato... The last bit will be white pork chili. I'm not sure how much more I can take, but it sure has stretched my dollar.

I made baked pork chops and a broccoli-cauliflower au gratin. I didn't have any bread crumbs to make a coating for the pork chops, so instead I crushed some french-fried onions and used those instead. The pork chops were the best I have ever made.

The store had whole chickens on sale, so I roasted a chicken, made some dressing, green bean casserole. Nothing very imaginative, but made a satisfying meal and leftovers for tonight.

My granddaughter made some very yummy romaine lettuce wrap (instead of tortillas) chicken tacos with jerk seasoning, a mango salsa mix, and I don't know what else. I just know they were exceedingly good. We had avocado on the side. Sooooo goooood.
