Comments (1)After slinging pry bars, hammers (I smashed my left index finger, it's HUGE!) and carrying out wood, plaster, bricks (that only smashed my arm once and cut my left ring finger), we ate stacked enchiladas. He'd made a roast with loads of garlic. It had a good flavor, but it was tough. So I boiled the meat, shredded it, and added seasonings to it. Comments (18)We had scalloped potatoes, sauteed cabbage and onions then apple juice to deglaze the pan. I like making stuffed pork chops, but they aren't stuffed. I make stuffing, and tie two boneless pork chops with the stuffing between them. Comments (8)Tonight, DH made beef stroganoff in the crockpot and it was delicious! Enough left over for tomorrow's dinner. I've been trying to avoid carbs, but to go with the stroganoff, I sauteed some garlic in butter and tossed together with some cooked vermicelli. I've been trying to avoid desserts too and since it's Friday, for dessert I had ice cream with crushed coconut cookies and a few sprinkles of skor bits. Comments (32)Everyone's meals sound yummy. Nicole no I won't have enough chicken for several meals but will have enough to make a nice big pot of soup. There's 5 of us and no one eats dark meat unless its in soup. So lots of dark meat for the soup. There is some breast left that I will make a sandwich with for lunch for a few days for Amiee. I make roasted chicken about twice a month. Its cheaper than beef or pork, is extremely easy to make and is always tasty. Ladypat, if I wasn't raising grands I doubt I would be putting a meal on the table every day. LOL. My mother also had a meal daily with Sundays always being chicken or a beef or pork roast. The one day a week everyone gathered around the table together with no activities taking everyone in different directions. In this house were at the table for supper daily but that will change when the boys are older and have school activities to do....See More- 8 years ago
