Help with ideas please

I'm doing a dinner party on Saturday. The main course will be sous vide lamb shanks, the pudding sous vide ginger creme brulées.

I'd like to do something with sous vide sea trout as a starter. There'll be cheese and salad before the puds so it will be a fairly hefty meal!

As for the lamb, I'd thought of serving it with either a really nice mashed potato or if that seems too heavy, a carrot purée.

What would you do?
