A great Date & Nut Bread Recipe

Ricky, I'm pretty sure your recipe for the date nut bread is the one I made last time and it was great. Thanks for posting it again. I love fig Newtons but no-one else in the family likes them. If another way to use them doesn't come up maybe I'll go ahead and try this and eat them all my selfish self. Thanks.

If you cut them up a bit, you can use dried figs in any recipe that you would use another dried fruit in - pilafs, oatmeal cookies, breads, stuffings, etc. Although, there's nothing wrong with just snacking them gone before getting around to using them in a recipe. I love figs - dried and fresh. And the fresh dates this time of year ... mmmm

I would expect you could substitute chopped figs for the dates in that same recipe. I love dried figs.

I use them in the dressing for Mustangs' salad, I just made it for our Christmas dinner, and I make Cuccidati, which is basically a Fig Newton, the Italian version. They're pretty good for fig preserves, if you're into canning and have that many. I've also seen them stuffed with goat cheese and almonds, although I've never tried one.

Fig butter! chop or grind the figs and mix w/ softened butter... add a little honey or spices as desired. Great on dinner rolls or quick breads. :)

There's a fig cake studded with marcona almonds that I purchase in the cheese department at Whole Foods. It lasts a long time and is served in a wedge shape with some lovely cheese. I wonder if you could find a recipe for that!

Rita - how was the date & nut bread?

Ricky it was amazing! So moist. I sliced a nice thick piece and toasted it yesterday and then spread cream cheese on it. I let DH take the second loaf to work, it got scarfed up quick. I'm pretty sure it's the same recipe I used the last time but I couldn't find it. This time I printed it out and saved it in my little box. I need to type that one into my recipe book on my computer, it's a keeper.

annie1991, would you mind posting "Mustang's salad" recipe, please. I did a search but nothing turned up. TIA.
